I'm having a girls night at my place in two wks and i wanted to know what tasty finger food i should have?!


Question: Bruschetta

3 roma tomatoes; slice into 4 spears, sprinkle with salt and olive oil and roast in the oven for a while (275F/135C for an hour, or hotter and quicker if you're in a hurry)
5 fresh basil leaves, chopped up pretty fine, but still recognizable as leaves
6 kalamata olives, pitted and chopped up
2 pieces grainy, seedy bread
clove of garlic, peeled

METHOD
Mix the first three ingredients in a bowl and let it sit for about five minutes.
Toast the bread until golden and crunchy. Rub a peeled clove of garlic onto the bread, making sure your garlic is getting rubbed into the bread. You should still have most of a clove of garlic when you're done, that you can use for something else.


Sweet Potato Fries

INGREDIENTS

2 medium sweet potatoes
1 1/2 tablespoon oil
Curry Style
1 teaspoon curry powder
1/4 teaspoon tumeric
1/4 teaspoon ginger powder
1/2 teaspoon salt
Cajun Style
1 teaspoon dry mustard
1 teaspoon paprika
1/2 teaspoon thyme
1/2 teaspoon salt
1/2 teaspoon tabasco sauce

METHOD
Preheat oven to 205C/400F. Scrub the potatoes and cut 1/4 to 1/2 inch / 6-1.3 centimeter thick sticks. In a cup, mix all spices (curry or cajun) and the oil together. Put the potatoes in a bowl, and throw the oil stuff on them. Toss to coat, then arrange the sticks on a baking sheet. Bake for 35-40 minutes.

Samosa
INGREDIENTS

Dough
1 cup plain flour (maida)
2 tablespoons warm oil
Water to knead dough
Filling
2 large potatoes, boiled, peeled, mashed
1 onion, finely chopped
2 green chillies, crushed
1/2 teaspoon ginger, crushed
1/2 teaspoon garlic, crushed
1 tablespoon coriander, finely chopped
1/2 lemon, juice extracted
1/2 teaspoon turmeric powder
1/2 teaspoon garam masala
1/2 teaspoon coriander seeds, crushed
1 teaspoon red chilli powder
Salt to taste
Oil to deep fry

METHOD
Dough
Make well in the flour. add oil, salt and little water. Mix well till crumbly. Add more water little by little, kneading into soft pliable dough. Cover with moist cloth, keep aside for 15-20 minutes. Beat dough on work surface and knead again. Re-cover.
Filling
Heat 3 tablespoon oil, add ginger, green chilli, garlic, coriander seeds. Stir fry for a minute, add onion, saute till light brown. Add coriander, lemon, turmeric, salt, red chilli, garam masala. Stir fry for 2 minutes, add potatoes. Stir further 2 minutes. Cool. Keep aside.
Make a thin 12.5 centimeter / 5 inch diameter round with some dough. Cut into two halves. Run a moist finger along diameter. Join and press together to make a cone. Place a tablespoon of filling in the cone and seal third side as above. Make five to six. Put in hot oil, deep fry on low to medium till light brown. Do not fry on high, or the samosas will turn out oily and soggy.
Drain on rack or kitchen paper. Serve hot with green and tamarind chutneys, or tomato sauce.


Spring Rolls
INGREDIENTS
3 garlic cloves
1 tomato
1/2 onion
1 lb / 450 g "ground beef" (usually one package of the fake stuff is the equivalent of this)
3 carrots
1 lb / 450 g green beans
Soy sauce
Salt and pepper
Spring roll wrappers
Oil (any kind will do really, I use olive)

METHOD
I use a food processor to chop up the garlic, tomato, onion, carrots, and beans. But if you chop them yourself, just make sure you make them as small as possible. Leave them in separate bowls.
On medium heat put 1 T of oil in a large pot, and add the garlic, tomato, and onion. After that turns into a giant mush, or 5-10 minutes add the "meat" and 6 T of soy sauce. Again, after that starts looking like its all together / 10-13 mins, add the carrots and beans. Cover, and cook until everything is tender.

Now just drain it, and roll the mix up in the spring rolls. Use cornstarch and water, or something of the likes to seal them. Fry them in a pan with enough oil to cover about half of the roll.
Based on how much you put in each roll, it should make 15-30 rolls.


Bombay Bites with Spicy Tomato Sauce
Appetizers - Fried - -

INGREDIENTS

Spicy Tomato Sauce

1 onion, finely chopped
2 T vegetable oil
1 t marmite
1 t ground ginger
1 t ground cumin
400 g / 14 oz can chopped tomatoes
Salt and pepper
Chilli or hot pepper sauce, to taste


Bombay Bites
75 g / 2 oz whole-wheat breadcrumbs
1 onion very finely chopped
2 cloves garlic, crushed
400 g / 14 oz can chickpeas drained
2 t marmite
Salt and pepper
Vegetable oil for frying
METHOD
To prepare the sauce, cook the onion in the oil with the marmite, ginger and cumin until soft. Add the tomatoes, season, and cook for 15-20 minutes. Add chilli or hot pepper sauce to taste and adjust the seasoning.
Mix together all the ingredients for the bites in a liquidiser or food processor. Shape the mixture into 16-18 bite-sized balls.
Shallow fry them for 2-3 minutes on each side until lightly browned. Serve them hot or cold with the sauce.

Try this delicious tower of vegetarian nachos. Ready it minutes, it's faster than take-out.
The Ultimate Vegetarian Nachos are perfect for hectic weeknight meals, late-night snacks, or Friday nights to celebrate the weekend. Deliciously crispy in the oven, they are also microwaveable for a 45-second cooking. Vegetarian Nachos are vegetarian, contain only fresh ingredients, and they'll be ready before you can order a pizza!

The best thing about these nachos is their balance of flavours - cheese, veggies, salsa...but believe it or not, they are actually healthy too. What other fast food combines the four food groups with only a moderate amount of fat - including healthy fats from avocado? What a treat!

Make Vegetarian Nachos small or large. The worst thing is not having enough.

To serve three or more, use a cookie sheet and use the extra hands to help prepare. If there are picky eaters in the family, let everyone make their own plates and top them they way they like!

Ultimate Vegetarian Nachos Recipe
Ingredients:
Baked tortilla chips
Sharp (old) cheddar cheese, grated
Refried beans (Look for a canned variety that is suitable for vegetarians - lard can sometimes sneak in to these)
Salsa (heat of your liking)
Optional toppings:
Chopped green onions
Diced tomatoes
Diced avocado or guacamole
Shredded lettuce
Sliced olives
Plain yogurt or sour cream
Sliced jalepeno or pepperoncini peppers
Textured soy protein (TSP) left over from tacos (taco-meat style)
Leftover chili
Instructions:
1. Spread nachos out on plate or cookie sheet in as thin a layer as will fit. Grate cheese over top, and dollop the beans around the perimeter.

2. Microwave about 30 seconds OR bake in oven for about 10 minutes at 300 degrees Farenheit or until cheese is melted completely and beans are warm.

3. Remove plate/sheet and add the rest of your toppings. You may want to warm the nachos up briefly again, but if you do this, the salsa and yogurt should be added afterwards or the chips will get soggy.

That's it...now enjoy the free-for-all for most cheesy chips!

Ingredients
1/4 cup flour
1 cup Italian style breadcrumbs
2 eggs
1 tablespoon milk
1 lb mozzarella cheese , cut into 3/4 inch x 3/4 inch strips (or you can use string cheese and cut each in half)
1 cup vegetable oil
1 cup jarred pizza sauce or marinara sauce
Directions
1Whisk eggs and milk together.
2Coat each piece of cheese with flour, then dip in egg and then roll in bread crumbs.
3Dip in egg and crumbs again.
4Heat oil in skillet and cook sticks for about a minute on each side, or until golden and before cheese starts to leak.
5Drain on paper towels.
6Serve with sauce for dipping.

Thai salad rolls:

Ingredients
For the rolls
1 (16 ounce) package rice paper sheets

4 green onions , julienned about 3 inches long
1 English cucumber , julienned
2 carrots , peeled, julienned, and cut into 3 inch strips (or shredded. Choice is yours)

1 (16 ounce) package rice noodles , cooked and drained

1/2 lb bean sprouts
1/4 cup chopped peanuts

For the Sauce
1 tablespoon lime juice
3 minced garlic cloves
1/2 teaspoon hot pepper flakes
1 teaspoon sesame oil
3 tablespoons chunky peanut butter
1 tablespoon hoisin sauce
1 teaspoon brown sugar or white sugar
1/3 cup water
1 tablespoon soy sauce
Directions
1Combine all ingredients for the peanut sauce ahead of time, and set aside.
2In a medium pan, add about 1 1/2 inces of water in, and leave on medium to low head.
3place the rice papers in the warm water for no longer than 30 seconds, or until tender, but not falling apart.
4Set on counter or cutting board, and layer noodles, carrot, cuccumber, onions, sprouts and chopped peanuts. Be mindful that you still have to roll it up, so do not overfill.
5Drizzle peanut sauce over filling before rolling, or use as a dipping sauce.
6Other dipping sauces used are hiosin, soy, and a chili sauce (sambal Oklek-careful, if you haven't used this before, as it is quite hot).



cheezy pizza bread
Ingredients
1 (29 ounce) jar meatless spaghetti sauce

2 cups shredded part-skim mozzarella cheese
1/4 cup shredded parmesan cheese
2 teaspoons dried oregano
1 teaspoon dried onion flakes
1/4 teaspoon garlic powder
1 loaf unsliced Italian bread , cut into cubes

Directions
1In a 1 1/2 quart slow cooker, combine the spaghetti sauce, cheeses, oregano, onion and garlic powder.
2Cook for 4-6 hours or until cheese is melted and sauce is hot. Serve with bread cubes.

Dude... ok. I dont know what your friends like to eat. But as a dude.. i know some good things. I always like the cheese and crackers. And you could mix it up with some summer sausage slices. but if you are a lighter eater.. you cant go wrong with carrots and ranch! or even some broccoli and dip. chips and dip rock too. Maby a trey of small garlic bread slices! just make sure you get somethin to drink too. :)

Go to Marks and Spencers and buy a few nibbles from there they do the usual like chicken drumsticks/scotch eggs etc but they also do a really nice prawn platter, tapas and greek things, could also do some hot spring rolls/prawn seasame toast onion baji's etc.

Fresh fruit is always great and keeps the health conscious people happy. Fresh strawberries, grapes and all that stuff in they in season where you are.
If not then go the heart savouries (mini pies) and some traditional club sandwhiches.
One of the things we used to do was have kids parties but for adults.... fairy bread (hundreds and thousand sprinkles), cherios, lollies.. the kind of stuff you have at a 7 year olds birthday - its really silly but quite fun.

Maybe you should have Nachos and cheese, all kinds of chips ,pizza , chickentenders just the favorite finger foods.

Humus is always a winner!

Make a heap of bread cases by taking crust of the bread flatten with a rolling pin butter both sides and press into patty tins.
For fillings make a white sauce,you can add many combinations eg:cheese,prawns,crab,corn,asparagus.Jus... spoon into cases and serve.Also get a sheet of puff pastry and cheerios,wrap cheerios in pastry a cheaper alternative to the bought ones.
make sausage rolls buy some sausage meat add chopped onion soak 2-3 slices of bread wring out mix into meat put into pastry and baked with cheerios,use tomato sauce mild chili sauce,also you could make baby quiches.

Block of Cream Cheese topped with Red Pepper Jelly, served with crackers.

French Baguette, sliced and topped with a jar of bruschetta topping and fresh basil.

Strawberries, Grapes, Almonds, and Chocolate Sauce.

Boursin cheese spread and crackers.

Anti Pasti platter (Italian meats, Cheese, Olives) with sliced Baguette.

Boiled Bow tie Pasta, grape tomatoes, pepperoni on toothpick topped with Italian dressing and Parmesan cheese.
