TORTILLA ROLL-UPS 1 large package flour tortillas
1 (7 oz.) can diced green chilies
1 (4 oz.) can chopped olives
1 (8 oz.) package cream cheese
2 packages wafer-thin ham slices




Blend cream cheese, chilies, and olives until well mixed. Spread over single tortillas and place ham slices on top. Roll up and slice like a cinnamon roll and place a toothpick in to hold in place. These can be frozen and served later. Simply thaw out before party.

SHRIMP COCKTAIL
1 (46 oz.) can tomato juice
2 cans tiny broken shrimp
1 cup finely diced celery
1 tablespoon Worcestershire sauce
1/2 teaspoon garlic salt
1 small bottle ketchup
4 tablespoons horseradish
3 tablespoons lemon juice
3 teaspoons sugar
1/2 teaspoon salt




Mix and chill overnight. Serve as an appetizer in glasses with or without a spoon.

HEAVENLY FRUIT DIP
1 (12 oz.) container whipped topping, thawed
1 sm. jar marshmallow crème
1 (8 oz.) pkg. cream cheese
2 sm. cartons strawberry yogurt





Mix ingredients together and refrigerate until ready to serve. Good with apples, strawberries, grapes, etc. Other yogurt flavors can be substituted in place of strawberry.

2 cups real mayonnaise
1 (10 oz.) package frozen spinach, cooked and drained
1/2 cup chopped green onions
1/2 cup chopped parsley
1/2 teaspoon salt
1/2 teaspoon pepper




Combine and chill several hours, or overnight. Great with fresh vegetables.

FRUIT PIZZA
1 c. sugar
3 T. cornstarch
1/8 tsp. salt
? c. water
1 c. orange juice
? c. lemon juice
1 (8 oz.) pkg. cream cheese, softened
1 tsp. vanilla
? c. granulated sugar
sugar cookie dough (your favorite recipe)
fruit, well-drained (bananas, pineapple, grapes, strawberries, kiwi, cherries, etc.)




Combine first 6 ingredients to make orange sauce. Cook one minute and allow to cool – set aside. Make your favorite sugar cookie recipe and roll out 1/8-inch thick onto a well-greased pizza pan. Bake at 325 to 350 degrees for about 8 to 10 minutes. Cool. Combine cream cheese, vanilla and sugar and spread over cookie. Top with fruit of your choice. Spoon orange sauce over all. Chill in refrigerator 3 to 4 hours before serving.

NACHO DIP
1 large can refried beans
3 to 4 mashed avocados
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon lemon juice
1 package taco seasoning mix
2/3 cup mayonnaise
1/2 to 1 cup salsa
2/3 cup sour cream
1 cup grated cheese
1/4 cup chopped olives
2 tablespoons green onions
1/4 cup chopped tomatoes




Bottom Layer: Spread 1 large can of refried beans in bottom of 9 x 13 pan.
Middle Layer: Mix together and spread on top of refried beans: 3 to 4 mashed avocados, 1/2 cup mayonnaise, 1/4 cup sour cream, 1 tablespoon lemon juice.
Top Layer: Mix together and spread on top of middle layer: 1 package taco seasoning mix, 2/3 cup mayonnaise, 1/2 to 1 cup salsa, 2/3 cup sour cream.
TOP WITH: 1 cup grated cheese, 1/4 cup chopped olives, 2 tablespoons green onions, 1/4 cup chopped tomatoes.

Sam's Club or Costco are great for little appetizer foods like Nancy's deli rolls (in freezer section). There are alot of dips you could do, I like spinach dip and pumpernickel bread. Meatballs with cocktail sticks, tea sandwiches, veggie tray, chex mix. I love the butter mints at showers too.
