Easy appetizer ideas for two women chatting the evening away.?!


Question: My high school friend, whom I haven't seen in years, is coming over tomorrow night. I want to just serve some appetizers. Something we can munch on for hours, while catching up with each other. I have pretty high cooking abilities, so no recipe is too scary for me. I just don't want to spend time slaving over the stove.

So, what is your favorite appetizer/recipe?

P.S. I want something a bit more sophisticated then smoked weinies. ;)

It may seem very simple, but a nice fruit/cheese & meats platter is always nice and won't take you long at all to assemble. Shrimp cocktail is also elegant but simple. If you have a Trader Joe's near you, they have a lot of great munchies and good wines.

Not sure exactly what type of food you are looking for, but here are some ideas:

Spinach/artichoke dip
Fresh fruit with cream cheese dip
Cheeseball and crackers
Fudge
Carmelized pecans

I would head to Trader Joe's and buy a nice selection of cheeses and crackers.

I would also have grapes, figs, and various fruits available.

They also make these mini quiches that are pretty darn good - I'd pick up some of those.

I've made some awesome goat cheese in phyllo dough with a honey glaze appetizers before, but they are a ton of work.

Try making spring rolls, you can use minced meat or vegetables for stuffing, or deep fried calamari or chicken wings, or make fancy finger sandwiches, or Thai glass noodle salad, or Asian prawn salad, etc. Surf the Internet for further inspirations.

If you have a store in your area where you can purchase industrial sized foods, head on over to the frozen section and stock up on things like mini quiche, bacon wrapped scallops, spring rolls, or chicken wings (add different dips to be a little more sophisticated). You can also go to your local grocery store and get sushi, shrimp cocktail, veggie tray, fruit tray, and a cheese tray.

I love roasted vegetables. Asparagus,cauliflower,broccoli,whole small carrots with the tops trimmed, fingerling potatoes,brussel sprouts,whole green beans,and zucchini sticks drizzled in olive oil,sprinkled w/ coarse sea salt and pepper on a baking sheet at 400 till just tender. do each separately as roasting times will vary. You can sprinkle Parmesan cheese on any of these as soon as they come out of oven. Very good at room temp. You can make simple dip with fat free sour cream with a little horseradish stirred in.
