Taco Bar: tortillas (corn/flour), ground beef, diced tomatoes, fresh guacamole, shredded cheese, refried beans, spanish rice, chopped olives, cilantro, fresh salsa, sour cream, limes, shreddied (lettuce/cabbage).
All can be done yourself or with help of a friend.

stuffed cornish game hen, scalloped potatoes, asparagus with hollandaise sauce, dinner rolls, and molten lava cake for dessert.

finger foods or any Hors d'oeuvres, slice up meat into small sections and cheese and put them on the cracker, wine and cheese, dips, pigs in a blanket, ask people to bring some desserts or finger foods to lessen the workload.

Beef Fajitas use Flank steak (sliced thin across the grain)
Green peppers Onions
whole Garlic cloves (roasted)
Tortias
Cheese a Mexican blend pre shredded (less work)
4-6 limes quartered
Sour cream
Spanish rice
Re fried beans or whole pinto beans

That should be more than enough. Its all easy to prepare, you could even buy the bean and rice locally already done and put them in a nice bowl. BBQ the meat and slice mix with store bought fajita mix and roasted garlic. Serve buffet style. Done

Go Italian, lasagna or spaghetti bolognese. Add a side of salad and some hot italian or garlic bread. Hopefully some of your friends will bring red wine, maybe a nice Chianti.
