Do you have any quick and simple Easter side dish ideas for a BBQ?!


Question: since you didn't say what the main dish is, I assume you're bbq-ing hot dogs and/or hamburgers...with the standard cole slaw and potato salad. How about a BEAN SALAD too: Just get 1 can each green, kidney, garbanzo (can also add wax beans, sliced carrots). Mix with some sliced onion, and marinade about an hour in a good Italian dressing..... Or cut up tomatoes, onions, cucumbers & green peppers and marinade those in Italian dressing ..... Or make a PASTA salad: prepare small package of elbow or small shells. Add cubed mozzarella cheese, some peppercinis, sliced black olives, pepperoni, cut up roasted red peppers in some Italian dressing that you've whisked some mayo into.... GRILLED VEGGIES: Cut some bell peppers (red and/or green); onion halves; zuccini in half and rub with olive oil. A little oregano and salt and grill ...... DO-it-YOURSELF SUNDAES would be a fun dessert:)

Egg Salad

Classic Broccoli-Raisin Salad

1 medium-size purple onion
1 (16-ounce) package fresh broccoli florets
1 (3.75-ounce) package sunflower kernels
1 cup golden raisins
1 cup mayonnaise
4 bacon slices, cooked and crumbled
3 tablespoons red wine vinegar

Cut onion into thin slices; cut onion slices in half.
Stir together onion and remaining ingredients. Chill at least 2 hours. You can substitute turkey bacon and fat-free or lite mayonnaise for a lighter version. Serves six.
