Chocolate Marble Cheesecake
For the crust:
Melted butter for pan
10 whole graham crackers, weighing 5 oz
1/3 cup unsalted butter
For the cheescake filling:
5 oz semisweet chocolate
1 lb cream cheese, softened
3/4 cup sugar
1 tsp vanilla extract
2 eggs
Generously brush the inside of the pan with melted butter and chill it.
Grind the graham crackers to fine crumbs in the food processor; transfer to a bowl. Melt the butter in a small saucepan; add to the crumbs.
Stir with the wooden spoon until all the crumbs are moistened with melted butter.
Press the crumb mixture evenly over the bottom and up the side of the prepared pan. Chill until firm, 30-60 minutes.
Heat the oven to 350 degrees F. Cut the chocolate into large chunks. Chop them with the chef's knife, or in the food processor using the pulse button. Melt the chocolate and let cool.
Beat the cream cheese until smooth with the electric mixer, 2-3 minutes, or you can use the wooden spoon. Add the sugar and vanilla and beat just until smooth.
Add the eggs one by one, beating well after each addition.
Pour half of the filling into the prepared crust.
Mix the cooled melted chocolate into the remaining filling.
Slowly spoon a ring of the chocolate filling over the plain filling.
Using the table knife, swirl the fillings together to make a marbled pattern. Take care not to over-mix or the marbled effect will be lost. Bake the cheesecake in the heated oven until the sides are set but the center remains soft, 50-60 minutes. Turn off the oven and leave the cheesecake in the cooling-down oven until completely cool. Refrigerate at least 4 hours.
Something exotic like a dressed up cheesecake (they can be frosted like real cakes if you find the right spot). Nothing from your local grocery store. Go to a bakery and get a layered choc or strawberry cake... mmm...

If you can e-mail her a picture, she can digitize that image onto the cake.
Even if she can't supply you with the cake (you live interstate), then she can certainly suggest someone who can.
