My daugher is having an engagement to and she asked me and her mum to serve a buffet - any ideas or links?!


Question: Keep it simple is always the plan. You really don't need to have a huge selection, a couple of well presented dishes will do the trick.
You want to enjoy the occasion and not be stuck in the kitchen
Remember it's a buffet and not a main meal.


Roast beef sliced thinly

potato salad with green dressing (serves about 12)
1.8kg new potatoes
175g spinach leaves -fresh or frozen
1 bunch watercress
large handful parsley
570ml mayonnaise
Boil potatoes with skin on, drain& cut into even sizes,leave to cool.
Drop spinach, watercress and parsley into boiling salted water for a couple mins until soft.
Keep the cooking water!
Puree in a liquidiser and stir into the mayo. If too thick and a touch of the cooking water.
Pour over the potatoes

Tomato salad

Red fruit salad (serves about 12)
2kg mixed red fruits - strawberries, rapsberries, blackberrys, blueberrys etc
2 small oranges
200ml water
225g granulated sugar

Wash the fruit
Add rind and juice of oranges,water,sugar in a pan, over a low heat until sugar has dissolved.
Bring to boil slowly & boil for 3-4 mins
Leave the syrup to cool for about 30mins
Put the fruit in a serving bowl and pour over the cooled syrup and mix well.
Cover and chill until needed

All can be prepared in advance

Go with 2 entrees 3 Vegetables and a salad bar... I like the idea of a Chicken dish with a sauce, and a pork dish.

keep it simple

go to costo, sam's club or proce club, buy a 80 count pack of Hors D'oeuvres (a mixed variety of puff pasties, cocktail franks,etc), a bag of meatballs, spaggetti sauce, potato chips, a pack of small egg rolls, sweet and sour sauce, an angel food cake, assorted fruits (apples, graples, kiwi), assorted veggies (small tomatoes, small sweet peppers, pickles, pitted olives, celery), a cold cut tray (assorted meats and cheeses),french onion dip, plastic silverware, cups, plates, garlic spread/butter, mixed nuts, small mustard & mayo and steak/mini sub rolls

Now put the meat balls in a crock pot with spaggetti sauce, bake egg rolls and Hor D'oeuvres, cut up fruits, cut 3/4 of all the rolls is 3 piece section & Buttler with garlic spread (if no garlic spread available, mix one part garlic powder with 3 parts soften butter), leave one 1/4 of the rolls for cold cut tray

Put out chips nuts, mixed fruit platter, cold cut tray with rolls, veggy tray, nuts, chips and dips

put out the Hors D'oeuvres , egg rolls, garlic bread, the cake

bring the crock pot to the table

and enjoy the party
