Thursday night is Pokeno at my house. Any ideas for food, snacks, dessert, drinks? 12 nice women.?!

spinach stuffing balls:
6 eggs lightly beaten
1 pkg(6oz) stuffing mix
1/2 cup butter or margarine
1 cup parmesan cheese
1/4 tsp salt
1/8 tsp pepper
2 pkgs (10 oz ea.) frozen chopped spinach - thawed and sqeezed dry.
heat oven to 350
in a bowl combine eggs, stuffing mix, butter, parmesan cheese, salt and pepper. add spinach and mix well. shape into 1 1/2 in balls and place on ungreased baking sheet for 12-15 minutes.
tortilla roll-ups:
8oz cream cheese softened
8oz sour cream
1 packet dry hidden valley ranch dip or dressing
shredded cheddar cheese
romaine salad mix (in a bag, i like to chop it a little bit finer)
small flour tortillas
taco meat (optional)
mix cream cheese, sour cream and ranch. spread on tortillas and top with salad mix and cheese. roll-up and slice into three bite size portions...serve chilled. i usually serve these without the meat and never have any leftovers.
chocolate pie:
i love this recipe because it is quick and easy. i don't normally like cooked pudding because of the "skin" that forms on the top but this recipe doesn't do that.
1/2 cup cocoa
1 1/4 cups sugar
1/3 cup plus 1 tbsp corn starch
1/4 tsp salt
3 cups milk
3 tbsp butter or margarine
1 1/2 tsp vanilla
in a medium saucepan stir all dry ingredients together. add milk using a whisk until blended. on medium heat stir with whisk until it just comes to a boil (it will be thick by the time it boils). remove from heat and add butter and vanilla. pour into your favorite pie crust (i love a graham cracker crust) and refrigerate until completely chilled. top with whipped topping if you would like. ENJOY!!
quesadillas! some plain cheese, some with chicken, maybe some with ground beef/ steak. then all the dips (salsa/ sour cream/ guacamole/ heart attack cheese {velveeta & salsa}) they're simple & quick (you can microwave 'em instead of using a skillet) = yummy!
Sweet and sour cocktail wieners. = Equal part mustard and jelly warmed together until the jelly melts then add the wieners.
Ham roll ups = Softened cream cheese + horseradish + onion flakes + dried chives [all of these to taste] spread onto thin ham slices roll up starting with the long side. Refrigerate for about an hour or more. Slice into 1/2 inch pinwheels.
Veggie tray with this dip = 16 oz cottage cheese in blinder 1 packet of Ranch Dip Mix.
