I need a suggestion for a vegetable for a dinner party--anyone have a good one?!

Question: I need a suggestion for a vegetable for a dinner party--anyone have a good one!?
I am serving----

salad: romaine lettuce, dried cherries, sliced almonds, feta cheese
main course: grilled cilantro-lime shrimp/scallops on skewers with cherry tomatoes and mushrooms
rice: whole grain brown with diced mango and red pepper

I am thinking of having asparagus spears with lemon zest on them!. Maybe some hollandaise sauce--I don' t know!. Does that sound good!? What does anyone think!?

dessert will be sliced strawberries with whipped cream!.Www@FoodAQ@Com

Answers:
in my opinion, asparagus is ALWAYS good!. if the skewers have tomatoes and mushrooms, and the rice has mango with red peppers, I'd try adding a third veggie to the skewer (like some kind of onion) and serve the skewers ON TOP of the rice with the salad on the side!. your veggie problem is resolved and it'll look really good!.Www@FoodAQ@Com

The asparagus sounds great!. Yum!. You could also do a baked pumpkin!. It's very cheap and easy for a large group, and also very tasty and something a lot of people don't make at home!. I just cut it up into squares, and brush it with garlic and olive oil, bake in an ungreased pan for about 25 minutes!. It's delicious with a dallop of sour cream sauce!. Sometimes I add crushed walnuts, but if you already have almonds in the salad !. !. !. maybe not!. If you want it to be a sweeter dish, you can sprinkle brown sugar and cinnamin instead of the garlic and olive oil!.Www@FoodAQ@Com

You kind of already have the veggies taken care of with the salad & the mushrooms and tomatoes on your skewers!.

Maybe serve some small pitas cut in half so your guests can make their own pockets with the shrimp and veggies!.

The rice dish sounds good too!. I'm not crazy about whole grain brown rice but that's me!. Maybe a jasmine or basmati rice with the same condiments!. Or maybe a bowl of each, the contrast of the white and brown rice served in bowls next to each other would look nice!.

I think your whole meal sounds great!.Www@FoodAQ@Com

Sounds wonderful! My daughter makes salads like that:) !.!.!. I, personally, don't care for hollandaise sauce, and plain butter would be even better on the asparagus!. You can "tie" some strips of roasted red peppers around little bundles of them to serve !.!.!. You might think about getting an Angel Food cake to serve the strawberries & whipped cream on too:) !.!.!.!.!. otherwise, it's a beautiful dinner!Www@FoodAQ@Com

broccoli (or is it brocolli) - cooked (par boiled and then perhaps roasted for 5) then sprinkled with toasted sesame seeds!.

will complement the prawns nicely
