What is good to serve with Ceviche?
I remember having it with some kind of chip. Do you have a suggestion?

I like it with tostones. They are fried plaintains that are then smashed and refried into a crunchy chip that is soft and light inside. You can also serve them with fried tortillas. I would suggest that you make them yoursef. They are pretty easy and they taste a lot lighter than those your buy in a bag.

Ceviche, yummy. Serve it chilled with salted corn chips and/or tostadas (deep fried tortilla) along with your favorite hot sauce.
You really can use your imagination here, any type of "chip like" item would work. Some common examples:
Tortilla Chips, Fried Plantain Chips, Cassava, Toast Points, etc. etc.
If you use cassava or toast points you can season them to go with your ceviche!!
