Finger foods/quick foods for party?

I am having some of my friends over on Saturday night. I have a ton to do all week and am sure I'll be out straight that day. Does anyone have any suggestions on what I can serve for food? It's probably going to be 10 or so girls. I need something quick and easy. And it's two weeks before my wedding, so I'm leaning towards at least SOME healthy foods. I'm looking for both finger foods and something (anything) with a bit more substance.

Any help would be appreciated....again, I'm limited on time (not to mention cooking skills!) so even some good prepared food from the grocery store that you'd recommend would help. Thanks!

Finger foods can be very substantial, I would just suggest having a pretty good variety.

Of course veggies and dip. Your veggie aisle will have all that you need, but if your really short on time hit the salad bar for some of the stuff. It will be more expensive, but a sure time saver. Also, buy your dip and put it in your own dish. Everytime I make a veggie platter, I buy the store brand of veggie dip and everyone loves it. Go figure.

Cucumber crackers. Get one English cuke (the one in the platic wrap) and slice the cuke about 1/4 thick. Spead it with Alouette (or any herbed cheese) and top that with a small piece of smoked salmon. You can make these up to two hours in advance.

Mini Rueben Sandwiches. Buy coctail bread, corned beef, sourkraut and swiss cheese. Toast the bread on a cookie sheet at 350 for about 5 minutes, and drain the sauerkraut well before you begin assembling the sandwiches. The key to making these sandwiches ahead of time is to put the corned beef on the bread first the a little kraut and top with swiss cheese. You can cover on the cookie tray with plastic wrap and leave them on the counter for a few hours before you bake them at 350 for about 7 minutes, just until the cheese melts. Serve it with mustard and thousand island dressing.

Shrimp cocktail. Generally you can buy a ring in the frozen seafood section already made. They aren't bad, just follow the defrosting instructions to the T. The shrimp tend to be a little smaller than you would probably buy, but again it's a time saver.

Some type of marinted chicken kebabs or skewers. You can do one of two things here. You could buy chicken tenders, but I find it easier to just buy chicken breast and cut it into bite size pieces, that way you aren't soaking skewer and having to skewer them while they are raw. Marinate the chicken overnight in whatever marinade you like, you can even do this the night before, they will just taste better. When you are ready to cook them put them on a cookie sheet and bake for about 7-10 minutes depending on how big your pieces are. They won't take long. When they come out of the oven, let them cook for about 5 minutes and then stick a coctail toothpick in them. Just make sure whatever marinade you use you have a corresponding sauce. For example, if you do a greek marinade serve it with tzatiki sauce.

Baked quesadillas. You can make these ahead of time as well and reheat them whole right before your party starts. Serve them with salsa, sourcream and guacomole.

Have a fruit tray with yogurt dressing. You can buy these as well. Just check the date, it's strange, but you want one that is made the day before you are going to serve it.

Frozen appetizers are good and easy, but be careful of calories. Most of them are generally fried before they are frozen or in puff pastry. Check the calories and fat in those that are wrapped in phyllo instead.

I would have finger sandwiches, fruits and vegetables, and maybe some store bought finger foods like Bagel Bites or little chicken nuggets. You can buy party trays at Chic-Fil-A.

Put a few bowls of nibbles out initially, and preorder a load of pizzas to arrive about an hour or so after the party starts. Everybody eats pizza - make sure there's a vegetarian option too. And if you are drunk, even cold pizza tastes great later in the night. Have a good party.

i just had a party and bought a vegetable tray with dip, a meat & cheese tray and buns and chicken wings. you could make a fruit salad ( or buy one) too !

Finger Sandwiches

for something with substance you could make a rice salad or a quiche (or mini quiches)

Just a few ideas from my cook book you could think about that are reasonably easy to do.

Sausage Rolls.
Flaky or Short Pastry.
450 g tube of Sausage Meat.
Diced Onion.
Mix sausage meat and onion with about ? cup of water.

Take one sheet of pastry and lay on the filling in the centre third.
Fold one side over and brush the other with water and press on top.
Turn over and cut into rolls 3’’ long or cut into 3 or 4.
Make 3 cuts on top of each roll and place on an ungreased baking sheet.
Brush with milk and bake about 30 minutes at 215C (425F), in a pre-heated oven.

Club Sandwiches
Take four slices of bread and spread them with butter or margarine.
On the first slice place ham and some mustard. (Optional)
Place the second slice of bread on top of Ham, and cover with mashed egg, seasoned with S&P.
Place the third slice of bread on top of egg, and cover with de seeded tomato, seasoned with S&P
Top with forth slice of bread, spread side down.
Cut crusts fro the sides and cut into fingers.

If possible get a loaf of caterers sliced bread.
It is cut lengthways, instead of across, so you can make several at a time.

Rolls.

Take a slice of sandwich bread and spread it with butter or margarine.
With a corner of a square or rectangle of bread pointing toward you, place across bread corner to corner the filling and roll up.
Fillings to consider:
Shredded chicken with some s&p or mayo
Asparagus spears
Surimi, a few slim slices of lettuce and a seafood dressing.
Present with the open ends upper most so people will see the filling they want

This is a recipe, I always use for a quick hit. Get about 2 bags of those frozen meatballs (traditional not italian) If you have one of those mini crock pots put 1 full bag in then get 1 bottle of regular bbq sauce (any one will do) the next thing will sound crazy but its very good. About 5 big scoops of grape jelly. Mix together slightly, put the lid on and let them cook in the crock pot about 2 hrs or so. Try not to open it if you can, it will release all the heat you are cooking with. As the party goes on you can put those in a bowl and serve, while still cooking more, the pot is hot now so it will go a little faster.
Also, make some QUESO with ground beef or sausage with some tortilla chips. Melt cheese, brown meats you want to use) combine the two. Add rotell dip, stir heat and serve. PS for the meatballs, make them tidy by putting toothpicks near the bowl.

Vegetables and dip. Carrots, celery, peppers, mushrooms, caulifower, cukes, that is pretty healthy and easy. You can easily prep ahead of time. You can often find pre made platters if peeling and chopping is not your style.

Last night we feasted on sliced tomatoes and snap peas with crumbled feta and Plum oil! Yes.. very unusual but quite nice.Laid out on a rectangular glass platter it was also beautiful.

Shrimp and seafood dip. Chicken wings are always a favourite.

Samosas are always good and can be purchased well ahead of time.

M&M is great for dips and other finger foods. Wings, Ribs, all quite tasty there. There dips are microwaved too, so no fuss, no muss to get ready. Just the food prep for the dipping pieces (crackers, veggies, bread, etc...)

Sushi platters are a big hit, and actually taste better when you remove them from the fridge for just a bit.

Good quality nachos with a top quality 7 layer dip. Again the dip can be purchased pre made.

Bowls of nuts. A cheese platter with meats if so inclined. These can usually be ordered ahead from most good grocer's. Actually just stop off at your local grocer's and most are very happy to offer suggestions and then take care of your needs. Perhaps, even deliver!

Healthy crackers and biscuits. Stuffed roasted mushrooms are nummy. A take out pre roasted chicken

A fruit platter piled high with sliced melon, canteloupe, strawberries, grapes, pineapple, mango and papaya, etc etc. There will not be a touch left by the end of the evening!

How about Cosco's premade Greek pastries. They have them with spinach and feta and they are very easy and very very nummy. They have a lot of elegant snack foods ready to just be heated and served.

As far as healthy goes veggie trays or fruit trays are always good and can be snacked on thru the night. Something with substance? Like a dinner? Very easy... tasty and healthy - take boneless, skinless chicken breast - lay on a piece of foil- add slices of red, yellow and green bell pepper (I sometimes add mushrooms/ onion). Spritz with a little lime or season to taste. Wrap up in the foil. Place packages on cookie sheet and heat for 45 minutes at 400 degrees. I serve this over brown rice ( minute maid has a great boil in bag brown rice that serves up quick). If that is too much for your busy schedule try to make cucumber boats... slice a whole cuke in half, long way (peeled or unpeeled is a matter of personal preference), scoop out the seeds... fill in with tuna salad/ chicken salad/ crab salad etc... Hope this helps!!!

-Chunky salsa w/ chips or celery and carrots.
-Little smokey weenies wrapped in pillsbury crescent roll dough, w/ mustard dipping sauce
-Cheese platters
-Try different cheeses w/ crackers, bread and fruit. Almonds, cashews or pecans on the side are also great.
-Purchase an antipasta platter

I made a taco dip that everyone loved last weekend. Heat salsa and shredded cheese on the stove a few minutes until the salsa bubbles up through the cheese and cheese is melted. Since you want to keep it healthy maybe put the sour cream on the side but we had it on top of the cheese and shredded lettuce on top of that. Eat with tortilla chips.
