I usually minus 1 egg yolk and 1 tbsp of butter.

For the filling, may I suggest avocado brown sugar mousse, ginger white chocolate cream or mango mint mousse. Dust it with powdered sugar before serving and you've got a winner!

If you're making the traditional cream filling and looking for different flavours try a flower extract - rose or lilac would be nice. If you're looking for something else try coddled cream flavoured with fresh berries. Nutella would be good as well. You might want to lighten this up with a little whipped cream. You could also make a tiramisu filling with marscapone and fill your pastry with that. YUM! Tell us how it goes!

These are all fillings that I will be using with Anginetti cookies (they look like little cream puffs). The only one I have had is the pineapple and it is really good. I found the canolli on line and I saw Paula Deen make the chocolate for lace trumpet cookies and thought it would be easier and work well with these cookies also. All three are so easy so...

1 pkg. Stella Dora Anginetti Cookies
1 (3oz.) cream cheese, softened
1 cup Cool Whip
1 can (8 1/4oz) crushed pineapple, drained

To use two packs of cookies use 8oz. cream cheese,8oz. Cool Whip and large can pineapple.

Beat cream cheese 1 minute. Add Cool Whip and pineapple and beat 1 minute. Slice cookies in half. Place a spoonful of the mixture on bottom half of cookie then put top on. Refrigerate overnight.

Chocolate filling...

1 (3oz) cream cheese, softened
3 TBSP. milk
2 cups powdered sugar, sifted
2 oz. unsweetened chocolate, melted
salt to taste

soften cream cheese in milk. Add sugar 1 cup at a time, blending after each addition. Add melted chocolate and salt. Beat until smooth.


Canolli filling...

1 1/4 cups Polly-O original Ricotta cheese
1/4 cup powdered sugar
1/2 tsp. vanilla
1/4 cu miniture semi-sweet chocolate chips

Mix ricotta cheese, sugar and vanilla in medium bowl until well blended. Stir in chocolate chips.
