Any good h'ors deurves recipies???

A friend is having a bridal shower and I am in charge of making h'ors deurves. Any suggestions for something that would be simple, yet decadent, and also not too expensive (I need enough for about 30-40 people) would be extreamly helpful. I am wanting to make at least 3 to four different types

I have always found great things to make and they are easily resized for any amount of people. There is also easy, medium and advance types.

Roasted Asparagus wrapped in Prosciutto is always lovely...

1 pound asparagus (about 19 stalks), trimmed
1 tablespoon olive oil
Salt and freshly ground black pepper
6 to 8 paper-thin slices prosciutto, halved lengthwise

Preheat the oven to 400 degrees F.

Snap the dry stem ends off of each asparagus and place on a heavy baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss. Roast until the asparagus is tender, about 15 minutes. Cool completely.

Wrap each asparagus with 1 piece (about 1/2 a slice) of prosciutto, exposing tips. Arrange on a platter and serve at room temperature.

Also a crab or salmon dip is aways a hit.

Hot Crab Dip with Pita Chips:
1 large green bell pepper, chopped
1 tablespoon vegetable oil
2 (14-ounce) cans artichoke hearts, drained and chopped finely
2 cups bottled mayonnaise
1/2 cup thinly sliced scallions
1/2 cup drained and chopped bottled pimiento, or roasted red pepper
1 cup freshly grated Parmesan
1 1/2 tablespoons fresh lemon juice
4 teaspoons Worcestershire sauce
3 bottled pickled jalapeno peppers, or to taste, seeded and minced (wear rubber gloves)
1 teaspoon celery salt
1 pound crabmeat, thawed and drained, if frozen, picked over
1/3 cup sliced almonds, toasted lightly
Pita triangles, recipe follows

In a small heavy skillet cook the bell pepper in the oil over moderate heat, stirring, until it is softened and let it cool. In a large bowl combine the bell pepper, artichokes, mayonnaise, scallion, pimiento, parmesan, lemon juice, Worcestershire sauce, jalapeno peppers, and celery salt, blend the mixture until it is combined well, and stir in the crab meat gently. Transfer the mixture to a buttered ovenproof 2 quart chafing dish or baking dish and sprinkle it with the almonds. The dip may be prepared up to this point 1 day in advance and kept covered and chilled.
Bake the dip in a preheated 375 degree F oven for 25 to 30 minutes, or until the top is golden and the mixture is bubbly. Serve the dip with the pita triangles.

Pita Triangles:
8 large pita loaves, with pockets
1/2 cup (1 stick) unsalted butter, melted
Salt

Cut each pita loaf into 8 wedges and separate each wedge into 2 triangles. Arrange the triangles rough side up in 1 tight layer in a jellyroll pan, brush them lightly with the butter, and season them lightly with salt. Bake the triangles in the upper third of a preheated 375 degree F oven for 10 to 12 minutes, or until they are crisp and light golden, and let them cool in the pans. The triangles may be made 1 day advance and kept covered in an airtight container at room temperature.
Yield: 128 triangles

A beautiful crudite platter, made with snow peas, asparagus, endive, etc.

Shrimp with pesto dip.

A nice tray made up of olives, aged salami, roasted red peppers, and artichoke hearts is delicious!

OK, I will place here some of my most famous appetizer recipes. I did these on Mothers day for a group of about twenty. Just double or triple the recipes. A good estimate is about 4 appetizers per person.

Asiago Cheese Dip with Crostini

Ingredients:
1 cup light mayonnaise
? cup thinly sliced green onions
2/3 cup grated asiago cheese
? cup chopped sun dried tomatoes
1 carton (8oz) reduced fat sour cream
1 Tablespoon grated asiago or Parmesan
1 loaf French bread cut into ? inch slices, toasted

Method:
1. Combine first 5 ingredients in a bowl; spoon into a 1-quart casserole. Sprinkle with 1 tablespoon cheese. Bake at 350 degrees for 30 minutes or until bubbly. Serve with toasted bread.

Makes 32 servings: 135 cals 4.4g fat 19.7g carbs 4g protein

Breaded Ravioli

Ingrediets:
? 1 package (16 ounces) frozen beef ravioli
? 1/2 cup dry bread crumbs
? 1/2 to 1-1/2 teaspoons salt-free Italian herb seasoning
? 1/4 cup reduced-fat Italian salad dressing
? ITALIAN SALSA:
? 1 can (14-1/2 ounces) diced tomatoes, undrained
? 1/2 medium green pepper, quartered
? 1/2 small red onion, quartered
? 1 tablespoon minced fresh oregano or 1 teaspoon dried oregano
? 1 tablespoon minced fresh basil or 1 teaspoon dried basil
? 1 garlic cloves, minced
? 1 teaspoon balsamic vinegar
? 1/2 teaspoon salt
? 1/4 teaspoon sugar

Method:
Cook ravioli according to package directions; drain and let stand for 10 minutes. In a shallow bowl, combine bread crumbs and seasoning. In another shallow bowl, pour dressing. Dip ravioli into dressing, then coat with crumb mixture. Place on baking sheets coated with nonstick cooking spray. Lightly coat ravioli with nonstick cooking spray. Bake at 400° for 8-9 minutes or until lightly browned.
Meanwhile, in a food processor or blender, combine salsa ingredients. Pulse for 15-20 seconds. Serve ravioli with salsa. Yield: 6 servings.

Nutrition: 5 ravioli with 1/3 cup salsa equals 262 calories, 7 g fat (2 g saturated fat), 26 mg cholesterol, 924 mg sodium, 40 g carbohydrate, 4 g fiber, 10 g protein.

Tweak: 1) Forget the salsa, just use marinara sauce warmed. Any salad dressing will work alright as will any *small* ravioli. The larger ravioli do not toast as nicely. 2) add a little shredded cheese to bread crumb mix.

Spicy Tortilla Roll-Ups
These are delicious, easy, and can be made ahead of time.
No leftovers, either! I always serve them on a platter
with hot sauce for dipping. You may serve them with
toothpicks in each spiral for easy eating!! Prep Time: approx. 1
Hour 10 Minutes. Ready in: approx. 1 Hour 15 Minutes. Makes
60 1-inch pieces (30 servings).

Ingredients:

1 (8 ounce) package cream
cheese, softened
1 (2 ounce) can chopped black olives
1 (4 ounce) can diced green chiles
1 (4 ounce) jar sliced
pimento peppers, drained
2 green onions, minced
3 tablespoons hot pepper sauce
3 tablespoons chopped fresh cilantro
10 (10 inch) flour tortillas






Directions
1 In a medium-size mixing bowl, combine cream cheese,
olives, chiles, pimentos, green onions, hot sauce and fresh
cilantro. Spread the mixture onto tortillas. Roll the tortillas
up and refrigerate for at least 1 hour.
2 Slice the roll ups and serve.

Makes 30 servings: 110 cals 3g fat 15g carbs 3g protein

Pesto Parmesan Pinwheels

Ingredients:
2 tubes refrigerated Pillsbury crescent roll dough
1 small jar pesto sauce
1 jar roasted red peppers
? cup grated parmesan cheese

Method:
1. Open one tube of crescent dough and roll out onto cutting board being careful not to separate the dough. Use a fork to press the perforated edges of all the dough triangles together.
2. Spread ? jar of pesto sauce over the crescent dough.
3. Dice the roasted red peppers and sprinkle half of them over dough.
4. Sprinkle half of the grated cheese on top of peppers and pesto.
5. Starting at one end, carefully roll up the dough jelly roll style. Once rolled, carefully place on wax paper and put into freezer for at least one hour. (This makes it sooooo much easier to cut)
6. Repeat all previous steps with second tube of crescent dough.
7. After both rolls of dough have chilled, remove them from freezer and slice into ? inch rounds. Place on a greased cookie sheet and bake at 350 degrees 13 to 17 minutes.


Tweak: You can do the same thing with any ingredients. Popular alternatives being: Parmesan and spinach, Prosciutto and feta and basil, smoked salmon. Just check the Pillsbury website as they have tons of pinwheel ideas there.

Candy Coated Pecans


Ingredients:
1 egg white
1/2 cup packed brown sugar
1 dash vanilla extract
4 cups pecans

Method:
1 Preheat oven to 275 degrees F (135 degrees C). Line a
cookie sheet with wax paper. Spray the wax paper with
cooking spray.
2 Beat egg white until stiff. Add brown sugar and
vanilla. Stir until smooth. Mix in pecans and stir until
coated. Pour the nuts onto the prepared cookie sheet.
3 Bake until browned, approximately 10 to 15 minutes.

Hope you enjoy, The dip is very rich in flavor. The tortilla roll-ups are fairly spicy and the pecans are of course quite sweet. Any type of raviolli will do fine with the breaded ravioli so long as it is small. The dip, Pecans. and Roll-ups can be done ahead of time. The ravioli and Pinwheels will need to be cooked the day of the event.

Salmon Moose

1 can salmon
2 pkgs cream cheese
1 lemon
fresh dill

Open salmon and separate with fingers, removing any bones. Add to mixer with other ingredients. Mix, mix, mix. Check taste, and add salt and pepper, and mix mix mix. The more you mix the smoother it gets. Line a round bowl with plastic wrap, and put the mixture into the bowl, cover with more wrap and refrigerate. It can be made a day or 2 in advance and makes a truly decadent spread for crackers or toasted baguette.

Finger foods.Make some meat balls in BBQ sauce(use pretzel sticks for serving),then pigs in a blanket,veggie tray with ranch,pretzel sticks thru cheese,olives,pepperoni chunks,and baby tomatoes.The pretzels leave no mess.Hope this helps...
