Can kabobs be made ahead marinated , skewered and frozen?!

Question:

Can kabobs be made ahead marinated , skewered and frozen?

i plan to broil these in the oven but am not certain if the marinade on the veggies will burn and if the veggies should be par cooked-any suggestions?

Answers:
yes, but some veggies get mushy because the freezing water in them makes sharp ice crystals that "cut" the fibers that hold them together. Cherry tomatoes and bell peppers are real bad for this. Baby potatoes, pearl onions, broccoli, and carrots work better, but they still change texture. Best to make & marinate fresh, then grill or broil.

This is a good question, I wish someone had an answer.

I wouldn't freeze the vege's. Just marinate, skewer and freeze the meat. Wait on the vege's until you are going to cook the kabab's.

I think doing the meat ahead of time would be fine but when I freeze fresh veggies and then thaw them they are great for putting in something but not if you want crispy veggies on your kabobs. They get really limp when frozen.

the veggies and even the meat will be squishy when you cook them and freeze them

it is fien to freeze and then cook them. Just make sure you give them time to thaw or they vwill be frozen on the inside and warm on the outside. Good luck, hope they come out awesome!

yes avoid the veg except the green chillies
use the microwave to thaw them and heat over a open flame
