steak pie , chips, an veg, had a very busy day an its the best i can come up with .... should really cut the grass but hey gotta feed the kids !!!!

bangers and mash i just made...

Smoked chicken, sautéed potaoes & red peppers roasted wirh onion chunks & tomatoes. Followed by strawberries & chocolate pond pudding. Mostly composed of leftovers.....

Having mine at work about 11.30 pm. Prawn salad with pineapple.

I'm going to cook Chicken Fajitas tonight!

Roasted lamb with a lemon-garlic rub. Cream spinach, corn, Cesar salad and french bread. And after-dinner mints :()

not sure what i'm having for dinner. but i'm having Uno's for lunch. Its this chicken stir fry with squash, baby carrots, zuchinni, broccoli, califlower. haha i can't spell but you get the idea. topped with teriyaki sauce and all over rice pilaf. mmm... can't wait.

Made some crab cakes and ate them with a carrot and cucumber salad.---It was pretty awful!

I'm cooking some linguine with a veggie medley and chicken breast. And I'm gonna stir fry the chicken and veggies, and toss the pasta in with some olive oil.. yummy!!

I am having nothing for dinner this evening as I dont feel hungry.

now im eating rice (wafer) papers....have a packet of 100 A4 sheets...yummy!!!!

Absolutely Nothing! Thursdays is Mexican lunch days. I eat way too much for lunch and dinner never seems to come around.....maybe a nice cocktail while I answer some more questions?

I've already made it! Made chinese chicken with mushrooms, spring onions, prawns, green pepper, onions, ham, rice and soy sauce. Going to serve it with prawn crackers.

Stuffed aubergine with couscous and tomatoes

1 aubergine
For the stuffing:
100g/3?oz couscous
1 cinnamon stick
? tbsp dried chilli
1 tbsp curry powder
1 tbsp garlic, chopped
1 tsp ginger, chopped
1 tomato, seeded and diced
40ml/1?fl oz vegetable stock
2 tomatoes, cut in half and sliced
olive oil
1 tbsp pine nuts
1 tbsp poppy seeds
To serve:
yoghurt
mint dressing
mango chutney

Method
1. Preheat oven to 200C/400F/Gas 6.
2. Roast the aubergine in a griddle pan on all sides until cooked through.
3. Cut in half, spoon out the flesh and reserve.
4. Prepare the couscous by placing the cinnamon stick, curry powder, garlic, ginger and diced tomato in an oven-proof dish with the couscous and vegetable stock. Cover and cook in the oven for 4 minutes.
5. Spoon the aubergine flesh back into the shells and top with the couscous mixture. Place slices of tomato on top, drizzle with olive oil and sprinkle on the pine nuts and poppy seeds.
6. Finally place under the grill for 5 minutes and serve with a dollop of yoghurt, mixed with mint dressing and smooth mango chutney.
