INGREDIENTS
1 (2 to 3 pound) whole chicken, cut into pieces
2 onion, sliced into thin rings
4 potatoes, sliced
2 carrots, sliced
1 sweet potato, sliced
1 tomato, sliced
5 tablespoons mayonnaise
1/2 teaspoon cayenne pepper
1/2 teaspoon ground turmeric
1/2 teaspoon garlic powder
salt and pepper to taste
DIRECTIONS
If you have time, place chicken in cayenne pepper, turmeric, garlic powder, salt and pepper for 2 to 3 hours. If not, mix these spices together and cover both sides of the chicken pieces with the mixture, then cover each piece of chicken completely with mayonnaise on both sides.
Preheat oven to 400 degrees F (200 degrees C).
Place the sliced onions, potatoes and carrots in a lightly greased 9x13 inch baking dish. Put chicken pieces on top, then place the tomato and sweet potato slices around the chicken. Cover dish with aluminum foil and bake in the preheated oven for 15 minutes.
Lower heat to 325 degrees F (165 degrees C). Bake for another 45 to 60 minutes, turning chicken over once, until vegetables are soft and chicken juices run clear. Remove aluminum foil and grill in the oven for 5 to 7 minutes on each side of chicken, to give it a nice coloring. Enjoy!

1/3 cup olive oil
1/3 cup balsamic vinegar
1 tablespoon dried rosemary

1 clove garlic, minced
4 skinless, boneless chicken breasts
1 green bell pepper, sliced
1 red bell pepper, sliced
1 small red onion, quartered
3 carrots, cut into 1 inch pieces
1 eggplant, cut into 1/2 inch cubes
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Line a cookie sheet with aluminum foil, and coat with cooking spray.
In a large bowl, combine olive oil, balsamic vinegar, rosemary, red pepper flakes, and garlic. Place chicken in the bowl, and marinate 5 minutes. Transfer to a baking dish, reserving marinade in the bowl.
Place green bell pepper, red bell pepper, red onion, carrots, and eggplant in the marinade, and toss to coat. Arrange in a single layer on the prepared cookie sheet.
Place the chicken and vegetables in the preheated oven. Bake chicken for 20 minutes, or until juices run clear. Bake the vegetables for 35 minutes, or until the edges of the vegetables brown.

Bowtie pasta tossed with butter and garlic
asparagus or greenbeens cooked with onion and bacon.

Strawberry Chicken

Preheat oven to 350F
Boneless skinless chicken breasts
sprinkle lightly with salt, heavily with pepper, and medium with cinnamon, press spices on with back of spoon.
Spread strawberry jam (or apricot) in a thick layer on top side of chicken.
Place jam side up in glass pan. Dilute 3 tablespoons jam in hot water about 3/4cup. pour in bottom of pan.
bake 1 hour. DO NOT TURN. Coating should thicken.

Make pasta to package directions.
Saute minced or pressed garlic (2 cloves) in 4 tablespoons butter or marg. over med/low heat. when just translucent add a pinck of salt. Toss pasta with butter right before serving. Sprinkle with pepper.

2 cans green beans. 1 or 2 strips bacon, cut into 1/4 to 1/2 inch pieces. 1 tablespoon rough cut white or brown onion. Cook bacon until just starting to crisp. Remove bacon, but leave oil in pan. On low flame saute onion in bacon fat. When just translucent add both cans drained green beans, toss and heat through, re-add bacon. Add pepper to taste. It may need salt, taste before you salt.

The pasta and beans only take about 15mins.
Serve with a white wine, like a reisling.

I'm doing the same thing May 26th! I'm planning on seafood paella, chicken caccitora, with corn on the cob, fresh tomatos with basil and olive oil and vinegar, a pasta salad, and roasted vegetables. That's something you might like...

Cut up a variety of veggies (onions, carrots, cauliflower, zucchini or other summer squash, potatoes are good choices) and arrange them in a layer in a roasting pan or cookie sheet, add either cloves of garlic, or minced garlic, sprinkle with fresh herbs (springs of rosemary are good and any others you have, dried Italian seasonings work as well) garlic or onion powder, salt, pepper, and drizzle olive oil over all. Roast in oven at 350, stirring with spatula so all are cooked evenly. NOTE: Might want to add zucchini hlf way through so it doesn't get over cooked.

8 pieces of chicken breasts (boneless)
2 tblspns of ginger paste
2 tblspns of garlic paste
1 tspn of white pepper powder
Salt as per taste
? cup of cheese grated
4 green chillies
? tspn of mace powder

2 tblspns of chopped coriander leaves
1 egg
? cup of fresh cream
Butter for basting

Recipe
Cut chicken breasts into two-inch cubes. Apply ginger paste, garlic paste, white pepper powder and salt to the chicken cubes and keep aside.

Mash the cheese to make it into a smooth paste. Add Finely chopped green chillies, mace powder, nutmeg powder, coriander leaves and salt.

Add egg and mix well. Add chicken to the cheese mixture. Then add fresh cream and mix delicately. Keep in the refrigerator for about two to three hours.

Put chicken onto the skewers and cook in a moderately hot tandoor or a pre-heated oven (200 degrees Celsius) until it is just cooked and slightly coloured.

Apply a little butter for basting and cook for another two minutes till chicken is fully cooked.

INGREDIENTS:0.67 cup Milk(or water) for naan
1 tsp. Yeast (Dry)
1 tsp. Sugar
2 cups All Purpose Flour
1 tsp. Salt
4 tbsps. Clarified Butter
2 tbsps. Yoghurt
2 tsps. Onion seeds



DIRECTIONS:Whisk warm milk/water with the yeast and sugar until the yeast is dissolved. Cover and let stand in a warm place for 10 minutes.
Sift flour and salt three times into a large bowl add the yeast mixture, half of the ghee and the yogurt.
Mix into a soft dough then knead on a floured surface for about 5 minutes or until dough is smooth and elastic.
Place the dough in a large greased bowl, cover and let stand in a warm place for 1 1/2 hours or until the dough is doubled in size.
Punch down dough then knead for 5 minutes. Divide dough into 6 pieces. Roll each piece out into 8 inch round nans.
Cover an oven tray with foil and grease the foil. Brush the nan with a little of the remaining ghee and sprinkle with some of the kalonji.
Cook Nan one at a time under a very hot grill for about 2 minutes on each side or until puffed and just browned.

4 tbsps. Corn Flour
2 tbsps. All Purpose Flour
2 nos. Egg
Vegetable Oil for garnishing
4 leaves Curry Leaf
3 tbsps. Tomato Sauce
2 tbsps. Chili Sauce (green)
? tsp. Vinegar



DIRECTIONS:Mix cornflour,maida and eggs and beat to a sticky consistency.
Dip chicken pieces and fry separately in oil and keep aside on tissue paper to soak extra oil.
Heat 1tbs of oil and put curry leaves in it. When the leaves crackle put the chilli and quick fry it.
Add 2 tbs water . Add tomato sauce, chilli sauce and vinegar and let the mixture come to boil.
Add the chicken and mix well over heat. Serve hot.

INGREDIENTS:
1 Carrot
2 Potato
A few Cauliflower florets
1 Capsicum (Bell Pepper)
5-6 Frenchbeans
2 Medium Onions
2 Tomatoes
2 slices of Pineapple
3 Apple
1 bunch green Coriander
1/2 tsp Red chilli powder
2 tsp Black salt
salt to taste
2 tbsp. Tomato ketchup
2 tbsp Oil
DIRECTIONS:Wash all the vegetables nicely in chilled water to retain its freshness.
Julienne carrot, potatoes, french beans, capsicum. Dice pineapple, apple, and onions. Keep aside.
Boil caroot, potatoes, french beans and cauliflower florets all till half done.
Heat oil in a wok and saute onions for till it turns translucent. Add capsicum and tomatoes, then all the pre boiled vegetables.
Toss lightly and add pineapple, apple and add the dry masalas and the tomatoe sauce. Careful you must not break the vegs.
For serving, heat a tawa and lay one cabbage leaf and pour the vegetables mixture on top of the leaf. Add a spoon of butter just before serving to bring the sizzle, smoke and aroma. This is surely going to click to your guests.
Options
A grilled chicken breast or bone less mutton pieces well fried,or even fish well fried or boiled will enhance the sizzler taste.
