MY ULTIMATE FAVORITE

BREAKFAST BURRITOS!!!!

INGREDIENTS
2 pounds ground pork sausage
12 eggs, beaten
1 (4 ounce) can chopped green chile peppers, drained
8 (10 inch) flour tortillas
8 ounces Cheddar cheese, shredded
1 teaspoon all-purpose flour
1 cup milk

DIRECTIONS
Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, reserving 2 tablespoons drippings; set sausage aside. Preheat oven to 350 degrees F (175 degrees C).
Add the eggs and green chiles to the skillet; cook, stirring occasionally, until eggs are scrambled and set.
Lightly grease a 9x13 inch baking pan. Place the tortillas on a counter top or other clean surface. Cover each tortillas with portions on sausage, cheese and eggs. Roll up the tortillas and place them seam side down in the baking dish.
Heat reserved sausage drippings in the skillet. Sprinkle on the flour and stir. Add milk, stirring constantly, until the gravy begins to thicken. Pour the gravy on top of the tortilla rolls.
Bake in preheated oven for 10 to 15 minutes, until gravy is bubbly.

I went to a lovely bed and breakfast and they made this incredibly simple, yet delicious recipe.

*Cinnamon Sugar Grapefruits*

-Grapfruits (one grapefruit half per person, so if you have 6 people, you need 3 grapefruits)
-1 cup of sugar
-1 tablespoon on cinnamon
-1/2 cup of melted butter

Preheat oven to 350 degrees. Slice grapefruit in half. Mix sugar, cinnamon and butter together (as you would for cinnamon toast... I like a lot of butter, some people prefer less... great thing about this recipe is that it's all to taste!). Take a pastry brush (or you can just spoon it) and brush over the top of the grapefruit. Place grapefruit in oven for about 10 minutes (watch the edges so it doesn't burn). Pull out for a tasty treat!

PS- Cinnamon rolls are good... you should look for the orange flavored cinnamon rolls that you just open up and bake for a twist on it.

Strawberry Blintzes

Buy a package of crepe pancakes already made.
Fill them with a mixture of ricotta cheese, egg and sugar
Roll them up and top with strawberry, blueberry or other sauce and bake.

mimosas! yum!!
