Answers:
Well, it's quite hot today so I'd go for something simple like salad, steamed fish, cous cous, new potatoes, that sort of stuff.

Or even better, have a barbecue!

A good paninni sandwich and white wine!

Pick up the phone and save cooking something and order out. Though it may be a waste of money but there are good Chinese places open. Lemon Chicken being a personal favourite. Saves cooking and dishes too.

A good old fashioned fish n chips

Yep that gal above got it right. Steak and fries (chips) or baked potatoes. Ice tea, or wine if you drink. And broccoli with cheese, and garlic bread.

roasted salmon fillets with garlic, pepper and lime seasoning served with asparagus and creamy mash potato.

chop up garlic and spread over the salmon, cover in pepper and fresh lime juice and wrap in tin foil. Stick it in the oven at 190 degrees and roast for about 15 mins.

Boil the asparagus, drain and drizzle with olive oil.

Boil potatoes and mash up with butter and a splash of milk.

Chicken salad and some crusty bread.

Spring salad mixed greens with cubed cucumber and mango slices with yogurt dill salad dressing (1/2 large avocado, lemon or lime juice of 1/2 fruit, 3 tbsp dill, few pinches of salt--- all to taste)

Steamed asparagus with lemon & butter on top

Parmesan risotto:
3 teaspoons olive oil
1 cup finely chopped onion
2 cloves garlic, minced
1 cup arborio rice
1/2 cup white wine
3 to 4 cups canned chicken stock
Parmesan cheese
Salt
Pepper

In a large saucepan heat oil over medium heat. Add onion and cook until tender. Stir in garlic and cook until aroma is released. Add rice and cook for 1 minute. Add wine and stir until all the liquid is absorbed. Stirring continuously add in 1/2 cup stock at a time. Do not add next 1/2 cup until the previous one has been absorbed. At end of cooking, stir in some parmesan cheese until melted and combined. Season with salt and pepper. Serve with freshly grated Parmesan cheese and pepper.

Hot wheat rolls or baguette slices

Iced Red Zinger tea with mint sprigs

Ice cream sandwiches
8 frozen waffles
1 pint ice cream of your choice
1/2 pint raspberries
4 thin, crispy wafer cookies
Mini chocolate chips or sprinkles
Multi-color sprinkles
Raspberry coulis, to serve, recipe follows

Toast the frozen waffles according to package directions and let them cool. Remove the ice cream from the freezer and allow it to soften a bit. Slice the raspberries in half.
Spread some ice cream evenly over 2 waffles. Cover 1 with raspberry halves. Press a wafer cookie gently onto the other. Gently press the 2 halves together to form a sandwich. Put it into the freezer while you make the rest.

Spread the chocolate chips and sprinkles onto plates. Remove the sandwiches from the freezer. Press 2 edges of each sandwich into the chocolate chips and the other 2 edges into the multi-color sprinkles. Carefully cut them in half using a serrated knife, put them onto plates, and drizzle with the raspberry coulis.


Raspberry Coulis:
1 (10-ounce) bag frozen raspberries
1/2 cup sugar
1 teaspoon fresh lemon juice

Put the frozen berries, sugar, and lemon juice into a small saucepan over medium heat. Cook, stirring often to mash the berries, until their juices are released. Press through a sieve to strain out the seeds. Cool and refrigerate.

Last night I had a quiche with a Moroccan cous-cous salad, that was delicious. Tonight I am having steak and potatoes with asparagus, can't wait.

Pizza and French Fries

? 1 lb ground beef
? 1 large onion, finely chopped
? 2 cups mushrooms, chopped
? 5 tomatoes, diced
? 2 Tbls all-purpose flour
? 1/2 cup water
? 1/4 cup cider vinegar
? 1/4 cup chili sauce (Heinz)
? 1/4 cup ketchup
? 8 whole-wheat hamburger buns (toasted)

Crumble beef into a large nonstick skillet; cook over medium heat until it starts to sizzle, about 1 minute. Add onion and mushrooms and cook, stirring occasionally, breaking up the meat with a wooden spoon, until the vegetables are soft and the moisture has evaporated, 8-10 minutes. Add tomatoes and flour; stir to combine. Stir in water, vinegar, chili sauce and ketchup and bring to a simmer, stirring often. Reduce heat to a low simmer and cook, stirring occasionally, until the sauce is thickened and the onion is very tender, 8-10 minutes. Serve warm on buns.

first of all for how many? 1 or 2 then you can do a simple fish and salad and for 3 or more do something heavy and filling like a spaghetti or a good pasta salad with chicken breasts and either garlic bread or a 5 cheese texas toast!!!!

We are having Puerco Con Chile Verde....pork with a green chile salsa. OMG it is so good. You need 2 fresh jalepenos (not pickled), 4 banana peppers, 2 tomatos, 2 lbs of pork, 1 jar of Nopalitos (cactus), salt, and water.

Fry the veggies until the skin turns black and starts to peel. Let them cool and then peel off as much of the skin as you can.

In the meantime start frying the pork in a seperate, deeper pan. Once all that is done take the veggies and crush them. Once you are satisfied with that then pour it in with the pork, you can add salt if you want. We usually use a tablespoon, depending on how much you are making. We usually cook for 4 people (adults).

Then drain the cactus and pour it in. Add water if you want it to be soupy, wait for it to heat and and ENJOY!
