Does anyone know how to make almond bark mints?
I am making mints for my wedding and have a mold tray to make almond bark mints but not sure how to do them.

All you need is: white almond bark or candy melts, mint flavoring, and cooking spray. Melt your Candy melts according to package directions. Then add just a drop of mint flavoring to your melted candy. Let it sit for just a while but not to long. While your letting it sit lightly I mean lightly spray your molds. Now just spoon in the mixture to be even with molds and you have cute little wedding candies. PS the flavoring can be bought where you get your imitation vanilla.
When pouring any candy into molds, use a container you can stick back in the microwave for a few seconds if needs be. Once the candy is in the molds, tap the mold onto the table a few times to settle the candy mixture into all the little nooks and crannies in the molds, and to be sure there are no air bubbles in odd spots.
Be sure you read through all the instructions 2-3 times (on the bark and on the molds) before even starting -- including how to unmold the candies! I had a friend nearly destroy a mold because she hadn't read how to get the stuff out of it.
If you can't find almond bark at this time of year or in your part of the country, you can go to a crafts store and buy white or colored chocolate discs (also called candy melts) just for making little candies like these. They're not too expensive, and come with good instructions on the bag.
I know that you question concerned making almond bark for your wedding and I saw that you got some great answers. Just thought that you might want to make another easy and yummy candy for your wedding. I have made these for showers, weddings, etc. for years. Easy and freeze well so you can make them well ahead of time.

3 ounce package cream cheese
2 1/2 cups confectioners sugar
flavoring
food coloring
granulated sugar

Directions
Mix cream cheese and confectioners sugar together.
Start with 4 drops of flavoring, and then carefully
add flavoring and color as desired.
Knead until pie dough consistency is achieved.
Add sugar to make softer or decrease sugar for a firmer consistency.
Take small pinch and roll into a ball in granulated sugar. If you want you can keep dough white and use colored sugar for nice effect.
Press into mold, remove excess and unmold at once onto waxed paper. (these need special pliable molds from which you remove the candies at once so you don't need to allow them to harden) You leave the mints on waxed paper to allow the outer shell to become a little hard - inside stays soft. I then transfer to a rubbermaid container until time to use them if within a day or two - store in fridge. Or freeze until needed. Be sure to palce sheets of waxed paper between layers.
If you don't have the molds, just roll into balls, roll in granulated sugar and flatten with bottom of glass. I happen to use a swirl mold and rose mold, but have done it at our cottage with no mold as described above.
