Answers:
Jazz music, cajun food, and lots of dancing!

wow sounds fun, you might go one way with the magnolia flowers and sweet tea, mint juleps etc etc very refined kind of wedding, but on the flip side you can go with bright colors, lots and lots of beads, masks, Cajun/creole foods, research the internet to find out what kinds of traditions there are available and I am sure you can come up with a nice mix that you yourselves as well as your guest will have a wonderful time....good luck

Beach themed wedding or a cartoon themed, like your is Disneyland, bride and groom can dressed up like Prince Eric and Princes Ariel (I mean when Ariel is not a mermaid), and its like a costume party something.

Try Cajun/zydeco Belly Dancing for the Entertainment!

I went to one a few years ago and it was great. Its also cheaper then paying a live band.

Get a big band swing band to play. Serve Cajun food or soul food. go all the way and hand out love beads at the reception:)

I think you should change the theme because personally, i wouldn't ever want to have a Louisiana thamed wedding. I'm guessing you want something out of the ordinary for your theme, so do pancakes, or fruit, or meat, or grass, or even a normal wedding like roses, white wedding dress, white cake, something normal. just don't do a louisiana themed wedding, cause i just really don't know what that is!

If you want to be colorful you can do Mardi Colors for the bridesmaid dresses and decorate with beads and Mardi Colored accessories (masks, doubloons...). I like the previous idea of Magnolias. Green bridesmaid dresses with magnolias as accents would be pretty.

Food: red beans & rice, jambalaya, fish, fried pickle chips, shrimp, crawfish, gumbo, fried turkey, fried okra, dirty rice, hushpuppies, cloe slaw, muffelatas, beignets, king cake, pecan pie.

Make sure you have plenty of hot sauce on hand, jazz music and hurricanes to drink!

OOOOOOO......A Big Easy theme! Sounds like fun. If I were creating something like that, I'd go with Mardi Gra decor & Fat Tuesday deserts, Paczski, (poonckies). Jazz music would be a must, lots of masks, Lots of color, lots of beads & confetti to throw, instead of rice or seeds..... Some great cajun bar b' Q foods & stews, i.e, crawfish,& other seafoods, Jambalya, Papaiya dishes.....mint juleps & hurricanes for drinks, & of course, cajun beer. Even the wedding cake could be decorated with the magnolia flowers and beads draping each layer.

Maybe the bridesmaides/groomesman could dress in cajun costume. I think the magnolia flowers sound perfect! Toss in a bit of voodoo entertainment on the side. I'd have my groom wear a great Fedora and a jazzy suit, with the two toned oxford shoes. Maybe the head table could be designed like a float?

If you were wanting something more subdued, then you could go with a softer Blue Bayou type of theme. Though still festive in summer galia, that one is a bit subdued for a party.

Mardi Gra is a true party theme....Sounds like a great fun day ahead! Much good luck to you & Congrats!

go on a louisiana site lol, i cant help much sorry.
