start out with a nice appatizer like this one
3 cloves garlic minced
1/4 t. sea salt
1/4 t. freshly ground pepper
3 - 5 T. fresh oregano leaves
1/3 C. olive oil (may be herb flavored)
1/2 t. crushed red pepper
1/4 t. lemon zest finely grated
Place all ingredients except cheese in a large plastic zip lock bag. Close the bag and tip the bag back and forth to mix the ingredients. Break the feta cheese into large chunks and add to the bag.
Marinate for 3 -5 hours. Preheat oven to 375° F.
Place cheese and marinade in a pretty oven proof serving dish. Bake for 10 - 15 minutes until the feta starts to soften.
Remove from oven and serve with fresh crusty bread.>

1 1/2 lbs. flank steak
3/4 C. teriyaki sauce
6 T. vegetable oil
1/4 C. fresh ginger, finely chopped
1/3 C. garlic, minced
1 1/2 t. crushed red pepper
24 wooden skewers
Prepare basting mixture by mixing teriyaki sauce, vegetable oil, ginger and crushed red pepper.
Cut beef diagonally, across the grain, into 1/4-inch thick slices.
Thread each slice onto a bamboo skewer.
Brush ribbons generously with basing mixture.
Broil or grill 3 minutes per side to desired doneness, basting once or twice and turning occasionally.
Tip from the cook at the Texas Beef Council. Soak wooden skewers in water for at least 10 minutes before threading beef so skewers will not burn.>

Dandelion blossoms
Boil water, add blossoms and turn off. Allow to stand overnight. Next day, simmer for 1 hour, then strain and retain only the liquid. Add: 8 lemons 8 oranges 2 lbs. raisins
Place in large crock or plastic container. Ferment for 9 days. Stir twice a day. Place in bottles or jars until fermentation is complete. Do not seal the jars at this point. After the fermentation has stopped (the time interval depends on the temperature of fermentation), remove sediments by siphoning off liquid into clean bottles.
Again, allow the bottle cap to remain loose until no further fermentation takes place. Seal the bottles, store away, and prepare for some good medication!
PLEASE NOTE: If fermentation does not start within 1 or 2 days, add a cake of bakers' yeast, dissolved in 1 cup of lukewarm water. The bakers' yeast will replace natural yeasts that may have been destroyed by hot water in Step 1.>
MAIN MEAL
flour for dredging
salt and pepper to taste
1 T. olive oil
1 T. butter
1/2 C. Marsala wine
1/2 C. chicken stock
1 C. fresh sliced mushrooms (any type)
Cut each chicken breast in half. Pound each half to 1/4 inches thick. Season lightly with salt and pepper. Dredge in the flour and shake off excess.
Heat the oil and butter in a large saute pan. Add the chicken and lightly brown on each side, about 2 minutes per side.
Add the Marsala, chicken stock and mushrooms. Cook until the mushrooms soften and sauce thickens slightly, about 5 minutes.
Serve with a side of pasta
4 (4 oz.) pork chops
1/4 c. Italian salad dressing
2 tbsp. oil
4 med. potatoes, peeled and thinly sliced
1 sm. onion, sliced
2 tbsp. butter
2 tbsp. Italian salad dressing
1/4 c. shredded Mozzarella cheese
Marinate pork chops in 1/4 cup salad dressing in baking dish for 3 hours. Brown in oil in skillet. Return to marinade. Layer potatoes and onion over chops. Dot with butter. Drizzle with 2 tablespoons salad dressing. Sprinkle with cheese. Bake, covered, at 375 degrees for 1 hour or until tender. Yield: 4 servings.>

8 oz. kielbasa, thinly sliced (1 1/2 c.)
1 (10 3/4 oz.) can bean with bacon soup
In large saucepan or Dutch oven bring vegetables and water to boiling; reduce heat and simmer about 15 minutes or until vegetables are tender. Add kielbasa and bean soup. Heat thoroughly. Makes 6 servings.>
< SAUSAGE AND PEPPERS
6-8 Italian sausage links, sliced
1 large can Hunts sauce
1 large green bell pepper
1 large onion, sliced
1/4 tsp garlic powder
1 tsp fresh or 1/2 tsp dried basil
1/2 tsp fresh or 1/4 tsp dried oregano
2-3 T olive oil
3-5 cloves garlic, whole
1/4 cayenne or jalapeno pepper, minced
1 bay leaf
1 small can mushrooms
1 T balsamic vinegar
Slice the sausage into 1 1/2 inch thick slices. Core and slice the pepper, and slice the onion lengthwise, 1/2 inch thick. Finely mince the hot pepper; you may substitute dried red pepper flakes or cayenne powder. Adjust amount according to heat desired.
Brown the sliced sausage in the olive oil. When the sausage is half done, add the whole cloves of garlic and allow to brown in oil, but if garlic browns too rapidly, remove to a cooler side of the pan. Crush the garlic cloves into the oil with the tines of a fork when they brown. Add the peppers, onions and cook until edges of onions begin to brown.
Deglaze the pan with the balsamic vinegar. Reduce heat and add the sauce, bay leaf, and remaining ingredients. Simmer over very low heat for 30 minutes. Last 5 minutes, stir in the can of mushrooms. Adjust seasonings, adding salt and pepper to taste.
Remove bay leaf and serve with portuguese pops, bulkie rolls, hoagie buns or any hearty roll with a substantial crust.
For a special occasion, layer on a bit of Parmesan or mozzarella cheese and place under the broiler 2-3 minutes before serving.>

1 angel food cake
1 can Comstock cherry pie filling
1 c. sour cream
1 1/2 c. milk
1 pkg. instant vanilla pudding (sm.)
Break 1/2 cake into 9 x 13 inch pan. Spread 1/2 cherry filling over cake. Repeat with remaining cake and cherries. Beat remaining ingredients together and pour over cake. Chill overnight. Serve with topping of Cool Whip or whipped cream. Serves 12.
VARIATION FOR LEMON DESSERT:
Mix together:
Juice of 4 lemons
Grated rind of 2 lemons
1/2 c. sugar
Add 1 can condensed milk and beat 4 minutes at medium speed. Whip 1 pint cream and fold into lemon mixture. Break 1/2 angel food cake in to 9 x 13 inch pan. Pour half cream mixture over cake. Repeat. Pat down gently. Cover with coconut (optional). Refrigerate overnight.>
< CHOCOLATE SOUFFLE
2 egg whites
1 egg yolk
2 tbsp. sugar
1 + tbsp. Grand Marinor
1/8 tsp. vanilla
Preheat oven to 425 degrees. Whip yolks, sugar, vanilla, and Grand Marinor. Whip whites until firm but moist. Fold yolk into whites. Turn oven down to 350 degrees. Pour into buttered and sugared souffle (individual) cup. Bake 13 minutes. Serve by slitting top as a cross and add warm rich chocolate sauce.>
3 cups flour
2 cups Herman Sourdough Starter
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs, beaten lightly
1 stick butter
1 cup sugar
2 teaspoons cinnamon
1/4 cup chopped pecans
1/4 cup raisins, soaked in hot water
Place raisins in a coffee cup and soak for 10-15 minutes in hot water (rum can also be used for extra flavor).
Combine flour, Herman Sourdough Starter, baking powder, baking soda, salt and beaten eggs in a mixing bowl. Blend well to form a dough.
Turn dough out onto a lightly floured working surface and knead for 5-8 minutes, or until a smooth dough is formed.
Place in a bowl which has been rubbed with oil and turn once to coat dough. Cover with a damp, clean towel and set bowl in a warm place to rise until doubled in bulk. Punch down and roll dough out on a lightly floured surface into a 10x20 inch rectangle.
In a coffee cup, melt butter in microwave. Stir in cinnamon and sugar. Add raisins and nuts. Allow to cool.
When mixture has cooled, spread with cinnamon sugar and butter mixture. Sprinkle with additional cinnamon, if desired. Roll dough up, jelly roll style. Pinch edges and ends together well to seal.
Using a sharp serrated knife, slice dough into 1 1/2 inch thick slices and place side-by-side in a 11x15" baking pan (leave a little space between the rolls as they will rise).
Allow to double in size in a warm place, free from draft. Keep covered with a damp towel so they don't dry out.
Preheat oven to 325°F and bake for 25-30 minutes or until rolls are lightly golden.
Brush with butter and sprinkle with confectioners sugar, or drizzle with confectioners icing, if desired.
Variation: For sticky buns, pour 1/2 cup Domino brown sugar syrup in bottom of pan before placing rolls.
Variation #2: Sprinkle inside of dough with mini marshmallows before rolling up.
Variation #3: Do not slice dough after rolling up and bake in a loaf pan for cinnamon bread. Bread is done when bottom of pan sounds hollow when tapped.
