Got a potluck at work. Need ideas?

I have a pot luck at work on Monday. I need maindish ideas that would be complimentary to enchiladas and a beef and noodles dish. I can cook but i am brain blocked here. Any suggestions?


Answers:
Get flour tortilla's and put cheese, green onions, ( your choice of chicken, beef, pork, or shrimp) and a little cumin on one side of the tortilla. Fold the tortilla, and then melt a pat of butter in a skillet or griddle. Put Tortilla on melted butter and cook until it is crisp or cheese has melted and then turn and do the same on the other side. Its quick, easy and delicious! Good Luck!

Make spanish rice or beans and rice.

Bring fixings for tostadas. Buy the tostada shells, bring seasoned ground beef, pinto beans, shredded cheese, salsa and sour cream. You can also substitute tostada shells for taco shells.

Pretty simple idea here... And they are quite complimentary to Enchiladas, I'm not sure if it would work with beef and noodles...

Make a "serve yourself taco bar"!

Brown 2-3 lbs of ground beef. Add taco seasoning.(If this is at work, and electric skillet on low will keep it warm throughout the time needed for the pot luck.)

In smaller tupperware containers, take diced tomatos, onions, lettuce and cheese. If you prefer, a rub of sour cream and salsa are optional.

Make sure you dont forget the taco shells...

Swedish meatballs could be cool or a 7 layer Mexican dip (re fried beans/sour cream/avocado/cheese/olives/to... onions & layer)

Cream of Broccoli soup is a winner everytime. cook it up on a crock pot. Everyone with savor you dish.

Hmmm.... sounds like the menu needs a lighter/healthier alternative for the coworkers who need or prefer to eat lower fat, carbs, and cholesterol.

How about a big fresh Chinese Chicken Salad?

Or if you want to stick with a Mexican theme, how about a chicken tostada salad?

I would suggest a good cheddar cheese soup spiced up with some chopped, canned, green chili peppers and about 1/2 of a small can of Chipolte peppers in adobo sauce ( run these through a food processor ). This will light up the lunch and make you the star of the day.

It's does not have to compliment anything if it's pot luck. How about a big salad with all the fixings?
