Anyone know of a good homemade sauce for steak?

I have tried a couple of my own and from recipes but they never measure up to restaurant quality..thanks..xx

Peppercorn sauce
look it up on internet on how to make it :)
Pepper should be added to cooked dishes towards the end of cooking to prevent creating a bitter flavor, which can occur when pepper is cooked to long.

Cooking pepper for more than two hours can cause it to loose it's flavor and aroma completely!

Wrap whole peppercorns in a "cheese cloth bag" for simmering in soups or stews.

Pepper will have a amplified flavor after food it is in has been frozen.

Add to any savory dish, hot or cold. Seafood to vegetarian fair, everything taste better with a little bit of pepper!

Try adding pink peppercorns to dishes and sauces to add color, or keep your light colored dishes and sauces light with white peppercorns.

Freshly ground pepper goes surprisingly well on fresh fruit. This is especially true for pink peppercorns, they are a common ingredient in fruit sauces and as a garnish for fruit dishes.

Try Lightly toasting peppercorns before use.

Brandy & Peppercorn.

It's basically just a white sauce with brandy & cracked pepper added.

And anyone can make a white sauce.

Oh, definately Roqueforte cheese sauce. Melt a chunk of the cheese in some double cream with some ground black pepper -gorgeous

We mix up a pound of small mushrooms, 1/4 cup sweet vermooth (sp), 1/2 cup cooking wine, and a stick of butter. Saute over medium heat until the liquid cooks down to the consistency that you would like to go on your steaks. Yum!

a nice pepper corn sauce or anything with red wine or mustard

HOMEMADE A-1 Steak Sauce

1/2 cup of orange juice
1/2 cup of raisins
1/4 cup of soy sauce
1/4 cup of light vinegar
2 TBS of Dijon mustard
1 tbsp of bottled grated orange peel
2 tbsp Heinz catsup
2 tbsp Heinz chili sauce

Bring all ingredient's to a brisk boil stirring constantly for 2 minute's.
Remove from heat. Allow to cool to lukewarm. Put mix into blender
at high speed till pureed, smooth. Funnel into a bottle and cap tightly.
Refrigerate. Use within 90 day's

You could try this:

In the pan which you use to make the steak, leave the juice behind and add a knob of butter. Fry some sliced button mushrooms with some finely sliced green bell peppers and a few peppercorns for about 2 minutes. Add about a tablespoon of flourand mix in well then, add a cup of beef stock and a cup of milk and mix in thoroughly. leave on the heat for about 5-7 minutes.

Fat free natural yoghurt Dijon mustard & chopped parsley last night was very nice.
Or red wine, beef stock, chopped shallots & mushrooms
bring to the boil add a little corn flower & then simmer with the lid on for 20 mins.
Remove the lid add 2 spoonfulls of sugar & turn the heat right up & reduce.
BUT watch it as @ this point it will reduce quickly.
Be extremely carefull as hot sugar on your skin can burn to the bone!!

just use A1 or Heinz 57 and call it a day!! :-)

As for a sauce I'm not to bothered.
I will bring a special sauce you might like though you can try it and see.......JK x x

black pepper and mushroom sauce

1 big onion, sliced thinly
1 pound shiitake mushrooms
2 tablesppons of butter
a shot of brandy
3 tablespoons of heavy cream
freshly milled black pepper
salt to taste

sautee onions in butter, add in mushrooms, stirfry til onions and mushrooms are soft . Add in pepper and cream and bring to a boil. Lastly add in salt and brandy after you turn off the fire.

Fry your steak how you like it , add some pepper
corns , then some Drambui , flambe, when the flame
dies add some cream or elm le ... fab.

o0h this one is right up my street.1st get a good quality steak that has been properly hung(usually 3-4weeks)then coverwith honey and french mustard wrap in tin foil for 24 hours . set grill on max for 10 mins unwrap steak place under very hot grill for 30 seconds each side .get excellent red wine out of rack open and enjoy .Ps this is truly a wonderfull recipe especially if you envite me round as well take care XX

1 red onion browned in butter splash of red wine a carton of double cream garlic if u like and a few knobs of stilton mmmmmmmmmmm yummy yummy

Try plain butter and a sprinkle of chopped parsley - the steak should have a flavour of its own

steak sauce
INGREDIENTS:
1 cup catsup
1/2 cup onion, coarsely chopped
1 large clove garlic
1/4 cup water
1/4 cup Worcestershire sauce
1/4 cup lemon juice
1/4 cup white vinegar
2 tablespoons soy sauce
2 tablespoons brown sugar
1 tablespoons prepared mustard
PREPARATION:
Combine all ingredients in saucepan and simmer uncovered for 30 minutes or until it reaches a good consistency, stirring occasionally. Cool. Strain to remove onion and garlic. Store in refrigerator. When cooked, is brown and tastes almost like A-1 sauce.
