Question:

Having friends over for dinner at the weekend?

Any ideas what to serve for starter and main course? Both eat everything that I'm aware of and are especially fond of fish. Something quick and easy to prepare please with indgrients that are readily available in the UK.

How about a ceaser salad w/homemade dressing for a starter? Or a simple veggie soup or shrimp cocktail? Then maybe grilled swordfish or a fillet mignon for main course. All are easy to make and allow you to enjoy your guests. Go to a nice bakery and pick up some petit fours or cake for dessert.

How about salmon mousse for staters - easy to make - you'll get a recipie on-line. Then what about fish pie - really warming comfort food.

Starter could be stuffed mushrooms. Fry a small onion with the stalks of large field mushrooms. Fill caps with mixture and cover with Gorgonzola cheese, or Cheddar if preferred. Sprinkle with fresh breadcrumbs and bake in the oven for about 20 minutes. Main course, how about cod loins, spread with red and white crab meat, pepper, salt and a few ground mustard seeds. Again, sprinkle with breadcrumbs for a golden crisp top. Bake in oven, about 200 degrees for 20-25 minutes. Absolutely gorgeous!!

fish is great when cooked plain so that it keeps its own flavour...

starter: STUFFED MUSSELS
get some fresh mussels, clean them and put them in a casserole with a glass of water for two minutes... they will open up...
get rid of one of the shell and keep the mussel in tha shell remained....
in a bowl mix together some wet bread (take the bread , soak it into water and squeez it) chopped parsley, three chopped anchovies, pitted and chopped mixed olives, salt, pepper and 1 egg....
mix well and fill the mussels with it.
place them in a oven tray, sprinkle some breadcrumps on the top and cook them in the oven at 150degrees for about 15 min or when you see they getting golden!
serve nicely on a tray decorated with salad leaves and lemon slices!!!

main course: OVEN BAKED FISH
you can now choose any whole fish that you prefer such as seabass, trout, redfish... buy it and tell the fisher to clean it for you!!!!
at home place some alluminium foil in a oven tray, put the fish in it and fill its stomac with chopped cherry tomatoes, salt, pepper, parsley, a slice of lemon skin, a bit of chopped garlic and sprinkle with olive oil and white wine.
close the alluminiu foil around the fish.
this operation has to be done for each fish you prepare
place them for about 20mins in the pre-heated oven at 180degrees.

you can decorate with fresh parsley
remember always serve fish with a generous slice of lemon
a good white wine
and a fresh mixed leaves salad dressed with lemon dressing (in a bowl put 4tablespoon of olive oil, 2 tbs of lemon juice and salt, mix well and voila'!!!!)

My husband makes a great and very easy clam dip. He uses one can of minced clams and an 8 oz. package of softened cream cheese. Mix it together using a hand mixer with a little bit of the clam juice and garlic. Serve with crackers. He likes triscuits, I like wheat thins.

For a starter, how about large mushrooms topped with cheese, and grilled.

How about some fresh salmon, with asparagus, served with salad. Cut large tomatos in half, scoop out the flesh, mix it with cous cous, and fill the shell of the tomatos.

Does the cook have the weekend off then ?

Tuna salad, and/or soup, then grilled salmon, with sweet potato mash, greens, gravy. Fruit tart with icecream for dessert, then coffee.

Sea bass is beautiful for a main dish with fresh vegetables a little sauce. Easy and quick to cook. recipies on line.

Large flat mushrooms for starters filled with gently cooked spinach and melted cheese on top. Scrummy.

Poach a salmon or sole. Place washed salmon, skin down, on aluminum foil placed on a baking sheet. Sprinkle ground dillweed on fish. Slice a lemon extremely thin (1/4" thick) and cover top of fish. Fold the aluminum foil so as to completely enclose the fish without touching the fish. Bake at 350degrees in a preheated oven for approximately 15 - 20 minutes. Test for doneness by inserting fork in thickest part of fish and flaking it. If it flakes easily then it is done. If not, cook a little longer. Delicious.

mashed,creamed potatoes.

A good hardroll with butter.

Fresh fruit with cheese for dessert.

A good white wine.
