I'm getting baptized on June 10th. My mom wants to have a brunch after we come from church. We have NO clue what to put on the menu. My family basically eats anything. lol. I'm open for anything. Thankz so much.


Answers:
Make-ahead stuff (like the night before):

Quiche
fruit salad
broccoli salad

Make the morning of:

Pancake batter (which you'll put in the fridge, and then make up after church).

Or just serve some really nice rolls. Cinnamon buns might be nice.

Ham and spinach crepes are nice, too. You can make the crepes up the night before, then roll them at the table with boiled spinach, ham and a little mayo.

For super-easy, how about devilled eggs, fast-food fried chicken, cucumber salad, potato salad and fruit sundaes for dessert? You can make the eggs, salads and fruit sauces the night before, and just remember to pick up chicken and ice cream after church.

Well first of all, congratulations on your baptism!:) I guess your whole family would be with you in church so the meal or most of it should be prepared in advance. This would also save you the energy and stress of scrambling to put everything together once you all get home...starving. I have a standard set menu (although in my family, brunch would mean a full meal) I prepare for time-crunched occassions like these, and preparation on the day itself would only take about 20 mins. hope you like it:

To be prepared the night before:

Kani Salad with Wasabi Mayo dressing
Prepare the vegetables:
- Romaine Lettuce, Carrots, Cucumber, Red and Yellow green peppers cut into strips (you may add other salad veggies you like)..arrange in salad bowl, cover with plastic wrap and keep in fridge.
- Kani(japanese crabsticks)- just shred the kani (it has natural grooves where you can separate the pieces from each other) until it resembles spaghetti (keep in fridge covered)
- Tobiko (little Japanese orange fish eggs like the ones you see with sushi) for garnish
- Wasabi covered nuts (available in asian aisle in most grocery stores)
- Dressing: Good Japanese Mayonnaise (not too sour), Wasabi paste or powder, salt, pepper, mirin (or water)...make to consistency of regular salad dressing by adding water or mirin
- Assembly: Dress vegetables well top with Kani, tobiko and wasabi nuts

Crispy Fried Dumplings with Sweet Chili Soy dipping Sauce
Night before:
-buy assorted pre-made siomai (dumplings), thaw and deep-fry until half-cooked (about 2 mins)
-prepare dipping sauce by mixing Soy Sauce, Chili Garlic oil (available in groceries), a little lime/calamansi juice, a little grated ginger and honey
Day of brunch:
- heat fried siomai in oven or oven toaster for 1 minute before serving, serve in platter sprinkled with sesame seeds, drizzle sauce or serve on the side

Red Snapper (lapu-lapu) in Bokchoy wrap
-clean fish night before, put some sliced ginger and onion/shallots in the tummy cavity. Rub lime/calamansi juice, salt and cracked Red peppercorns inside and out or if you prefer,soy sauce with the citrus juice.
- slice tofu and marinate in soy sauce and grated ginger for about 10 mins.
- blanch bokchoy, cool
- put whole fish on top of bokchoy leaves, top with slices of tofu then wrap the whole thing and secure with spring onions.
-refrigerate overnight
-Steam for 15-20 minutes on the day of the brunch, top with toasted garlic and sliced scallions. Serve with same dipping sauce for dumplings.

Steamed Rice or your choice of Stir-fried noodles


Cold Almond Jelly and Lychee soup
-buy prepackaged almond jelly in grocery, follow instructions
-reserve syrup from lychee in can, slice into smaller pieces
On the day of brunch:
- Combine 2 ingredients together, put syrup and cover with crushed ice. Top with milk if desired.

All of these can be prepped the night before

HASH BROWN CASSEROLE
2 lbs. frozen hash browns
1 tsp salt
1 can cream of chicken soup
1/2 onion, chopped
2 cups corn flakes, crushed
1/2 cup butter melted
1/2 tsp pepper
2 cups grated cheese
2 cups sour cream
Mix all ingredients except butter and corn flakes. Pour in 3 quart baking dish. Mix butter and cornflakes and add to casserole. Back at 350 degrees for 45 minutes -uncovered

OVEN BAKED FRENCH TOAST
1 loaf 8 oz French bread
8 large eggs
3 cups milk
2 T butter cut in small pieces
4 tsp sugar
1 T vanilla
3/4 tsp salt
Butter a 9 x 13 baking dish...layer with bread. Mix eggs, milk, sugar, vanilla and salt. Pour over bread and cover. Refrigerate overnight. Dot with butter and bake at 350 degrees for 35 minutes. Sprinkle with cinnamon sugar. Let stand 5 minutes before serving with honey or syrup.

CINNAMON ROLLUPS
1 8 oz cream cheese softened
1 egg yolk beaten
1 1/2 sticks margerine
1 1/4 cups sugar
1 loaf bread
2 tsp cinnamon
Mix cream cheese, egg yolk, 1/4 cup sugar until creamy. Trim crust from bread, roll each slice flat. Spread with mixture and roll into jelly roll. Melt butter; mix cinnmon and sugar. Dip roll in butter then sugar. Place seam side down. Bake 400 degrees for 15 minutes.

The Shopping List:
Pick up these ingredients for each recipe, plus pantry items if you don't already have them on hand.

Canadian-Bacon Strata:
4 English muffins
1/2 pound sliced Canadian bacon (about 10 slices)
1 1/4 cups (5 ounces) shredded sharp cheddar cheese
1/3 cup finely shredded Parmesan cheese
8 large eggs
1 quart milk

Oven-Roasted Home Fries:
2 pounds red new potatoes
1 large onion
1 red or green bell pepper

Tomatoes with Basil Vinaigrette:
6 large plum tomatoes
1/2 cup fresh basil leaves

Pecan Shortbread Bars:
1 cup pecan halves
1/2 cup (1 stick) unsalted butter

Pantry:
Butter
Dijon mustard
Salt, table and coarse
Ground pepper
Hot sauce, such as Tabasco
Dried crushed rosemary
Olive oil
White-wine vinegar
All-purpose flour
Confectioners' sugar

The Schedule
We've designed this menu so that some items can be prepared in advance, meaning less day-of stress in the kitchen.

Up to One Day Ahead
1. Prepare strata through step 2; cover and refrigerate overnight.
2. Make Pecan Shortbread Bars; store in an airtight container at room temperature.

1 1/2 Hours Ahead
1. Bake strata; make basil vinaigrette for salad.

One Hour Ahead
1. Make Oven-Roasted Home Fries.

15 Minutes Before Serving
1. Cool strata; slice tomatoes, and dress with vinaigrette.
2. Cut strata.

Depends on what you like, You could do a lot of appetizers, or you could do a traditional "pot roast". Rachael Ray usually has a lot of good recipes and you can access some by going to FoodNetwork.com. Hope this helps.

The night before, make up what we call "Tahoe Brunch":
Fry up 1 pound bulk breakfast sausage with 1 diced onion, 1 diced green bell pepper, 1 diced red bell pepper, and liberal seasoning with salt and pepper.
Butter enough slices of day-old bread (or use moistened torn pieces of matzo bread or tortillas) to line the bottom of an oiled 9 X 13 baking pan.
Cover the bread with the sausage mixture. Sprinkle 2 cups cheese (your choice) over the sausage mix.
Beat one dozen eggs and pour over the sausage. Cover with plastic wrap and refrigerate overnight.

Bake one hour at 350 degrees F.
Serves 6 to eight.
