How much of what?

I am in charge of organizing desserts and cofffee for approx 400 people. What kind of balance between cakes, cookies, pies etc works?


Answers:
Are people going to be standing and eating or sitting down to eat? Do you have a budget?

If standing, I would serve "finger foods," such as cookies, brownies (cut in bite size pieces). Most people like to take a variety of bite size offerings because they're easier to eat.

As far as quantity goes, ask the people in the bakery department of a large food store what quantity to serve. I would tell them that you're in charge and have no idea of how much to provide. They're usually pretty helpful, especially when you give them all the information, such as standing or sitting, am or pm.

If people will be sitting, you might serve cake, but I'd stay away from pies since they are too messy.

Also, provide sugar free cookies and treats. This will be very much appreciated. You might want to serve brownies with and without nuts, for those who are allergic. Fruit is also a good choice to serve.

about 50 cakes, 100 12 oz of sodas and that should be it

Most people will go for the cookies because they are more totable. Depending on the cake flavor, it might go more quickly as well. I wouldn't opt for pies because they are more labor intensive, messy, and harder to eat.

I would do 2/3 cookies and 1/3 cake. Possibly have some nuts and mints to cut all the sweet.

If they are diabetics , load them up and you won't here from them anymore . Hi!Hi!

Is this catered or are you buying?
Fancy cookie platters go along way and with some bar type cookies..also brownie trays.

fruit and mousse tarts are much easier than dealing with cakes and pies for that amount of people. They are individual.. The key lime tarts are amazing but seasonal..apple..pumpkin..choc mousse..would work nicely.
Ask the caterer what balance is recommended...I would say 300 cookies..100 brownies...200 tarts

Some fresh fruit platters and some choc. covered strawberries would be nice also.

You should use mini tarts instead of pies, lemon, pumpkin, lime, cherry, apple, blueberry, and strawberry are all good flavors. Cakes you could use or make mini cupcakes as they are better for grabbing and are individual. Uh.......cookies, you could get 3 or 4 kinds, maybe chocolate chip, sugar, m&m, and white chip macadamia would all be good choices. I think also inside out chocolate chip cookies would be good too. You could also try and make mini muffins too, there are a lot of flavors that are good such as blueberry, lemon (w/ or w/o poppyseeds), spice, berry, and chocolate chip. That would be good with the cakes. I think that you should make about 1/3 cupcakes and/or muffins, 1/3 cookies, and 1/3 tarts! That way there is a variety for everyone to have, and make it so that there is enough for everyone to have at least 2 of everything.
