Check the number of invites you sent and cater for around 75% show. If you've had RSVP's returned cater only for that number.

count them the replies to the invitations? Count how many were invited?

count the invatations - and remember to make you your venue has enough space for them all, too!
When we got married we oredered for half the guests, so if you have 160 coming, cater for 80ish. we had pleanty of food but i guess it depends on if your guests will have eaten =before hand and also what the caterers provide per head.

I use to work for hilton, we would advise on tha basis of you are feeding 75% of the people there and there was always food left over
well u need some idea of how many are coming, but in my experience u can always get away with an extra 15 or so guests (assuming ur catering for about a hundred)
Then u look at what u cooking, and figure out how much u need for each person for example if doing sandwhiches
most people will eat 2 quarters which is one slice of bread per person
if doing a kebab stick most people eat one
if doing a cooked dish u need a good spoonful per person
lots of people overeat but then lots of people eat very little so it balances out
most buffets end up with heaps of food left over at the end cos they over cater
put on a dessert table that way if any one didnt eat enough savoury they can fill up on dessert
First of all estimate the total number of guests expected, deduct the number of females and multiply the remaining number by three. Add the two resulting numbers together. Child's play. With the left-overs you could try to feed another 5 thousand.
Keep a note of the people you invite. Always have extra food. Best to have some over than to run out!
Get invites confirmed and always add about 5 extra portions ... There is always one or two people who will eat more or less :-)
Any extra left over you could give to the local homeless shelter :-) or for cooked food you can freeze ... :-)
You don't, but if u always do too much then you know the guests will be fed.
