Three Course Meal Ideas?!


Question: Three Course Meal Ideas!?
It's my mum's birthday on Wednesday and I'm on study-leave at the moment so I have all day off!.

I was planning on making a three-course meal for her and my dad!. Fairly simple, because I'm not a sous-chef!. They eat fish, but not meat!.

Starter - Pea and Red Chilli Soup
Soften a chopped onion and a clove of garlic in a pan!. Add a pint of chicken stock and a chopped red chilli (with or without seeds - your call)!. Then in the jug you measured you pint of stock measure a pint of frozen garden peas!. Bring to the boil and then blend / blitz until very smooth with red flecks of chilli!. Transfer back to pan (allow to cool if you are planning ahead) and reheat when needed!.



Main -
Baked Cauliflower and Broccoli Cannelloni
(Doesn't sound particaularly nice, but trust me it is DELICIOUS!!! You have got to do it, they will LOVE it!!! Whenever I do it people always ask for a second or even third helping)

Cauliflower
Broccoli
8 garlic cloves
Passata
Red wine vinegar
Cannelloni
Chilli flakes
Parmesan & Mozzarella
Creme Fraiche
Basil & Thyme
(Fresh Anchovies - If you like them)

Boil veg!. Fry garlic, (Anchovies) and thyme in olive oil!. Add veg and cook slowly for 20 minutes!.
Mash!. Cool!. Pipe into cannelloni!.
Pour passatta and vinegar onto bottom of oven dish!.
Lay cannelloni on top!.
Mix seasoned creme fraiche and parmesan and pour over!.
Add mozzarella and basil!.
Drizzle and bake!.




Desert - Chocolate Rosemary Mousse

Again, stunningly easy and still great even if you cant get hold of rosemary - just a simple choccy mousse (you dont need a lot of it, its very rich)

284ml/10fl oz tub of double cream
3 sprigs of rosemary, plus extra to decorate
100g/3?oz dark chocolate (minimum 70 per cent cocoa solids), grated

1!. Pour the cream into a small saucepan!. Add the rosemary sprigs and leave to infuse in the cold cream for as long as possible!.
2!. Remove the rosemary then gently heat the cream until hot, but not boiling!. Add the grated chocolate and stir quickly until melted!.
3!. Pour into espresso cups and refrigerate until set!. Decorate with a small sprig of rosemary and serve!.

A simple green salad with their favorite additions and salad dressing with warm rolls and butter!. Fish stuffed with shrimp: get three large fish fllets like snapper, cod or sole!. Cut into two pieces one should be about 2/3rds and the other one third place the larger pieces on your greased baking sheet use aluminum foil for easy clean up!. Mix cooked shrimp with a purchased alfredo sauce and some fresh herbs like minced Italian parsley or dill and maybe some minced scallions!. Place the shrimp mixture on the fish Take the smaller piece of fish and place over the top after you cut a slit in the center so the shrimp peeks through kinda like a shrimp and fish sandwich!. Brush a little alfredo on top and sprinkle with some Parmesan cheese!. Bake for about 15 minutes in a medium degree oven 350 degrees check for doneness!. You can also put it under the broiler for the last five minutes!.Be sure to watch it carefully so it doesn't burn!. You can serve this with some Alfredo noodles with the juice of a lemon and some lemon zest added and a green veggie for color on the plate and a contrast in flavors!. Just add dessert!. I just wanted to say what a lovely idea and that no matter what you cook and how it turns out I'm sure your Mum will be really thrilled!.

If you can enlist your Dad he might help you with the wine side of it!.

also, make the table look really pretty, pick some flowers from your garden if you have some and see if you can find fabric napkins and a tablecloth so its like a restuarant!. Candles too!. Two sorts of glasses, one for wine and one for water!. Write up your menu on a card and put some kind of nibble on the table like breadsticks!.

Serve them tea or coffee afterwards with a chocolate of some kind!.

MANDARIN SPINACH SALAD
Wash & tear a bunch of fresh spinach!. Carmelize sliced almonds (stirfry in sugar until the sugar melts & coats the nuts); toss with 1 can drained mandarin oranges, and some sliced red onion !.!.!.!. Use a good storebought Balsamic Vignarette Dressing

QUICK SHRIMP THERMADOR
1/4 c!. chopped onion
1-2 TB!. chopped green bell pepper
2 TB!. butter
1 can cream of potato (or celery) soup
3/4 c!. half & half
1/2 c!. grated sharp Cheddar cheese
2 tsp!. lemon juice
12 oz!. cooked shrimp
!.!.!.!.Saute onions & green pepper in butter until tender!. Add soup and half&half and cook over medium heat, stirring constantly until blended!. Bring to a boil,, add cheese & stir until melted!. Add lemon juice and shrimp and cook just until heated (1-2 min)!. Serve over rice !.!.!.!.!.!.!.serves 4

Make a package of wild rice mix (like Rice-a-Roni)

Steamed broccoli or asparagus with butter & sea salt

LEMONADE PIE
1 large container Cool Whip
1 6-oz!. can frozen lemonade concentrate, thawed, undiluted
1 can Eagle Brand sweetened, condensed milk
1 9" graham cracker crust
Mix first 3 ingredients until well blended and put into crust!. Can dollop with extra Cool Whip around the edges, if you want!. Chill at least 4 hours - DO AHEAD !.!.!.!.!.can substitute limeade to make Key Lime PieWww@FoodAQ@Com
