Answers:
I would make a sign up sheet with all the categories/servings listed...allow them to pick their own category....when you have enough of 1 category close it out so they have to chose one that you need.

I suggest..a simple main dish... have every family pay $5 to cover cost and do a big pot of chili..or italian casserole....then have 6 appetizers....8 desserts...2 drinks....2 chips..or any other combination.

You need to have a sheet of paper with all the dishes you want on it. Have at least 2 - 3 lines per dish, so only a few will bring the same. You don't want everyone to just choose what is easier or what they want. Then have a section for paper products, drinks etc. Since it is a theme party, buy things that will work well with it. Like a cake shaped as a football. Or football decorations. Get together with the ones who are helping out, and talk about what you would like to happen. Come up with games for the time the football game is not on. Barbecue is fun for football parties. Hamburgers, hot dogs, ribs, coleslaw, potato salad, corn on the cob, vegetable salads, and anything that is simple yet filling. Finger foods are also good or even a mini buffet. Make it easier for you to be able to spend time enjoying the guest as well as the game.
