Answers:
ask some of the guests to bring a dish. this will save you time and money

Most mom like sugar, so make her a sweet treat. You could make something such as...

Chocolate Cake
Brownies
Cookies
Pecan Pie

this one is cheap, easy and healthy:
Ingredients:

* 1 medium White Cabbage, shredded
* 2 Carrots, coarsely grated
* 1 medium Cucumber, shredded
* 1 medium White Onion, thinly sliced
* 1 Green Pepper, thinly sliced
* 5 tbsp of Greek Yogurt
* 3 tbsp of French Mustard
* 1 tbsp Cider Vinegar
* 1/2 tsp Olive oil
* 1 tsp Tabasco
* Salt

Method:

* To make the dressing, mix yogurt, mustard, vinegar, Tabasco and olive oil with salt.
* Mix the vegetables in a salad bowl and toss well with the dressing.
* Serve as a side dish or salad.

you have a lot of starches... try some fresh fruits to munch on... I did this for my moms bday and it was a HIT... http://www.recipetips.com/kitchen-tips/t...

fruit salad

fresh fruit this time of year is great or whip it up into a kind of punch using sherbert and fruit.

A fruit salad or fruit tray. Fruit is in season right now, super sweet and non-fattening.
Happy Birthday to you mom too!

Watermelon, Cantalope, Potato Salad, Hot Dogs, Cookies, Baked Ziti,or Lasanga, Baked beans.
Have a great time! That is very nice of you to throw your mom a party. I hope that it goes well.

black balloons in the yard,and a burma shave sign set up..."lordy, lordy, mom's 40" etc

I would say that you should make some hot dogs or hamburgers so that the meal can be some what filling. DUHH!!!
