Backyard BBQ appetizer help.....?

Having a backyard BBQ using our new smoker & while the main dishes are planned - we are smoking pork butt, ribs & beer can chicken along with traditional sides of slaw, potato salad, baked beans, etc.....Need some snack ideas to hold us over til the meat is done.....Serving 6 adults & 2 teens.....Help!!


Answers:
Break out the grill and grill smoked sausage. Cut into slices on a cutting board, break out the toothpicks, and offer BBQ sauce and yellow mustard for dipping.

(Be sure you start that pork butt pretty early in the day.)

how about some bruschetta?
just take cucumber,red onion, basil, garlic, roma tomatoes, grated parmesean balsamic vinegar and olive oil. cut everything or throw it in a food processor til you get a chunky consistancy then serve with either tortilla chips or a baguette that has cheese melted on it. it is pretty yummy and addicting

Cheese Ball with Pecans
This easy cheese ball is made with a chopped pecan coating. Serve with your favorite crackers.
INGREDIENTS:
4 cups (16 ounces) shredded Cheddar cheese
1 cup chopped pecans
1/2 cup mayonnaise
1/4 cup finely chopped onion
1/8 teaspoon black pepper
1/8 teaspoon ground cayenne pepper
1/2 cup chopped pecans
PREPARATION:
Combine first cheese, pecans, mayonnaise, chopped onion, pepper, and cayenne pepper in a large mixing bowl; beat at low speed of an electric mixer until well blended. Shape mixture into a ball and roll in 1/2 cup chopped pecans.

Clam Dip
INGREDIENTS:
2 small packages (6 ounces total) cream cheese
3/4 cup mayonnaise
1 small clove of garlic, crushed and finely minced
1 can (7 oz) minced clams, drained
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon paprika
dash ground cayenne pepper or hot pepper sauce
1 teaspoon Worcestershire sauce
PREPARATION:
Clam dip directions
Mix the cream cheese, mayonnaise, and garlic together until smooth. Add minced clams and blend in with remaining seasonings. Chill clam dip thoroughly. Serve clam dip with chips, crackers, or vegetable dippers.


Dijon-Deviled Eggs
INGREDIENTS:
6 hard-boiled eggs
2 tablespoons mayonnaise
1 1/2 teaspoons Dijon mustard
1 green onion, very thinly sliced (slice a little of the green and keep separate from white)
a few leaves of fresh flat-leaf parsley, finely chopped, optional
freshly ground black pepper
salt, to taste
paprika, optional
PREPARATION:
Halve or quarter eggs; scoop yolks into a small bowl. Mash well; add mayonnaise and Dijon until desired consistency is reached. Stir in white part of sliced onion and most of the chopped parsley. Taste and add salt and pepper to taste.


Tortilla Roll-Ups With Ham or Turkey
Make this tasty tortilla appetizer recipe with ham or smoked turkey.
INGREDIENTS:
10 flour tortillas (8-inch)
1 (8-ounce) package reduced fat cream cheese or regular
10 ham slices or smoked turkey
1 head lettuce
salt and pepper to taste
PREPARATION:
Spread tortillas with cream cheese and sprinkle with salt and pepper; top with a slice of ham and a lettuce leaf. Roll tortillas up and chill. Cut each tortilla into 5 pieces before serving. Serve with salsa, if desired.

Smoked Sausage Stuffed Mushrooms
If ground smoked sausage isn't available you can add 1/2 teaspoon of a liquid natural smoke product (like Wright's) to 1/2 pound ground pork (not pork sausage).
INGREDIENTS:
1/2 pound fresh, ground smoked sausage, cooked and drained
24 large mushrooms, stems removed
1/2 pound cream cheese
1 ounce Parmesan cheese, grated
PREPARATION:
Cook mushrooms at 350° for 7 minutes. Allow to cool.
Mix cooled sausage, cream cheese, and Parmesan.

Fill each mushroom with 1 teaspoon of filling. Bake at 350° for 7 minutes.

Because the meal is heavy I would have light appetizers like veggies and ranch/chips and dip/spinach dip/BLT dip etc. An easy appetizer is cubes of cheese with fruit grapes and strawberries are really easy. Have fun and good luck! Julzzz

Roasted Red Pepper Dip

2, 7-oz. jars roasted red sweet peppers, drained
1/3 cup dried tomatoes packed in olive oil, drained and snipped
1 tsp. snipped fresh thyme
1 tsp. honey
1/2 tsp. salt
1 clove garlic, minced
1/8 tsp. cayenne pepper
Vegetable dippers, crusty bread, and/or crackers

Place roasted red sweet peppers, dried tomatoes, thyme, honey, salt, garlic, and cayenne pepper in a blender or food processor. Cover and blend or process until nearly smooth. Cover and refrigerate until serving, up to 1 week. Serve with assorted summer vegetables as dippers or spread on crusty bread or crackers. Serves 8.

fix some homemade salsa with roma tomatoes (5 or 6), fresh cilantro, a small onion chopped and about a half tsp of minced garlic. I just put it in a mini chopper and it is wonderful with tortilla chips!!!

You can also have an appetizer fondue station with fresh cut veggies and a killer cheese fondue recipe.

If all else fails, call Kentucky Fried Chicken for some wings for pick up. Also you can make some sausage balls with a pound of sausage (I use Jimmy Dean Mild or country mild) and a little bit of bisquik - I just mixed it all with my hands and add LOTS of shredded cheese before I put it in the oven. It takes about 10 minutes or so to cook at 350 degrees but soooo worth it.
