Hosting Small Wedding at our house, appetizer menu questions?!

Question:

Hosting Small Wedding at our house, appetizer menu questions?

50 people, about 11 will be kids. Mostly meat and potatoes crowd, so anything too exotic or fancy will not go over well. We want to serve mostly appetizers, and so far this is our 'rough' menu. Would like some input please: Shrimp Cocktail, Fresh Fruit, Crab Stuffed Cucumber Bites, Corn Chowder Soup and Mini Bread Bowls, Stuffed Cherry Tomatoes, BBQ Meatballs, Slices of Stuffed Chicken Breast, Cold Bean Salad served in Endive Leaves, Pasta Salad & Possibly a Mini Potato Bar and/or CornBread puffs w/pico de gallo topping.

Just catered this same even last DEC. They wanted an appetizer menu so they got : Fancy sandwiches made from marble rye round loaves. Loaded with cheeses, meats, veggies, my special sandwich spread and cut into wedges and held in place with frill toothpicks. Made a variety so those who didn't like pastrami could choose ham or turkey and for any of the vegetarians there were veggie sandwiches. ( I try to cover all bases)

These were a HUGE success, with the wedding couple getting many compliments on having it like this and to me for making it all.

Also served : pickles, fruit kabobs, stuffed jalapenos, tortilla roll ups, English toffee, biscotti, wedding cake, & punch. Everything homemade of course and when the guests found out even the toffee & biscotti was homemade they were impressed.

No matter what you do, put your heart into it and it will be grand !!!

: ) Have fun with it !

It sounds well thought out and balanced. Cold veggie tray, Jalapenos stuffed with cream cheese, deviled eggs are good.

Pigs in a blanket . Don't forget Pigs in a blankey . Kids love that stuff everything else sounds Scrumdeliicious

what's wrong with hamburgers and hot dogs and maccaroni and potatoe salad? Less work and something everyone likes.

Wow everything you mentioned sounds really good. What about adding some sliced pestramy (sp?)

It all sounds lovely... my only reservation is that it sounds like you might be making rather a lot of work for yourself stuffing all the stuffed things! But I think as long as you stick to stuff that can be prepared well in advance, you'll be fine.

A "HEALTH CONSCIOUS"-theme might be appropriate in this scenario.
My mother, who was a (type-1) sugar diabetic would appeciate any fresh salad wherever she went. Myself trying to follow in her footsteps (assuring to avoid any GLUCOSE-RUSH) try to eat a "more healthy" regimin.
One business luncheon that I attended served a SIMPLE garnished Bleu cheese on a cracker that collected all sorts of accolades.
The Host of this outing explained that it was no problem to mix and serve.

The menu sounds good, except for the kids. These are probably not foods small kids will eat. How about a special buffet for them: barbequed hot dogs, cheese slices, finger sandwiches, maybe even a frozen pizza. I'm sure you have an idea of some of their favorites. It would make them feel very special too. Good luck with everything.

cheese platter! make your own! go get a cake stand, or a cheese platter...whichever, and put some cheddar, blue, Parmesan, Brie, and some Gorgonzola cheese all spread out nicely on the platter. then put some grapes on the vine to fill the spaces, [red AND green], and surround with gourmet crackers .

there ya go elegant yet delicious.

also some greek stuffed grape leaves. YUM! look up the recipe its pretty easy.

for the kids. how about some bbq chicken kabobs.
maybe some pita bread and hummus.
mini bagels , cream cheese topped with cucumber slices.

cocktail wienies with crescent biscuits wrapped around then
[baby piggies in blankets]
don`t forget pita bread to stuff the chicken breast in and for the meatballs.. the meat and potatoes crowd really likes sandwiches
best ,you could try to do a lunch meat spread with all the fixings
[we always do lunch meat trays with roast beef ,ham turkey, chicken breast and 6 different kinds of cheese and condiments.. koolaid for the kids, coffee and diet soda for adults]
i`m from a large family and we normally have 1 wedding a year.

It soulnds like you have it pretty well planned out I don't think you need any help. Sounds great!

It sounds like you have it covered. Have fun!!!!!

Perfect Sushi Rice
Here is my recipe for the perfect sushi rice. You can eat this alone or roll into your favorite sushi roll with ingredients of choice. I use strips of carrots, cucumbers and slices of avocado. You can adjust the amount of vinegar in this recipe to suit your taste."

INGREDIENTS
2 cups uncooked glutinous white rice (sushi rice)
3 cups water
1/2 cup rice vinegar
1 tablespoon vegetable oil
1/4 cup white sugar
1 teaspoon salt
DIRECTIONS
Rinse the rice in a strainer or colander until the water runs clear. Combine with water in a medium saucepan. Bring to a boil, then reduce the heat to low, cover and cook for 20 minutes. Rice should be tender and water should be absorbed. Cool until cool enough to handle.
In a small saucepan, combine the rice vinegar, oil, sugar and salt. Cook over medium heat until the sugar dissolves. Cool, then stir into the cooked rice. When you pour this in to the rice it will seem very wet. Keep stirring and the rice will dry as it cools

Sounds great so far.And I was going to suggest pigs in a blanket. The only other thing I would have would be chips and dips for the kids and they are filling. Are you serving cake for the dessert? Have a fun time....good menu.
