for my breakout sessions of about 100 people and powerpoint presentations, I like to use 1/2 crescent rounds (5-6 chairs per 60" - 72" tables). There's a lot more room and each table feels like a "team" which encourages round table discussions.
Meeting matrix can help you chart/diagram rooms as well...they have a free software that you can use & print out.

We do the chevron style for our board meetings. They seem to like it and able to communicate better with each other. Diagonally in rows each side pointing down to the center.
Depending on the size of attendance.
We have 20-25 people and use the board room style.
Either U shaped or box/rectangular shaped. Both work well for our small group.
