What kind of food would you have catered for a mixed ethnic clientele?

over 80% is spanish remaining is american .. need some food ideas itll be a retirement party / lunchtime only!


Answers:
Trust me, Spanish people eat more than just spanish food, and Americans eat just about anything.

Being catered means limited choices. And lunch means lighter food.

I recommend a hot rice dish, a stir fried or steamed vegetable, and perhaps a fish (salmon with lemon?) for hot choices. For cold selections I would choose a selection of chilled salads (tossed, greek, antipasto ,tuna ,pasta ,etc), cheeses, and meats, with a variety of breads and rolls.

A selection of fresh cut fruit and a crudite (veggies and dip) make a nice presentation.

You could also ask the caterer for suggestions involving spanish favorites, like including tortillas with the breads and substituting regular dressings and dips with salsa and avocado.
