Need help with vegetarian food for a party.....?

need suggestions on appetizers, main course and side dishes for a vegetarian party.....can i prepare all the stuff two days ahead and reheat?


Answers:
Cheeses are a good first course. Lots of crudites and dips can be prepared days before. Veggie lasagna can be prepared ahead and is good for a crowd. Sides: bread and a big salad.

I have a lot of veggie friends and I always make different kinds of dips for appetizers like avacado dip, three bean dip, etc. and serve it with veggies, crackers, etc.

Main course... a nice BBQed Portabello mushroom, or some veggie lasagna is always nice. Or you could make a nice pasta dish with a garlic sauce and some spinich and red peppers.

Sides could include, salads, rice, risotto, roasted potatoes, anything really...

it depends... if your vegetarians are not vegan, you will have a lot more options.

for instance: macaroni & cheese (home made, baked in the oven) makes a wonderful, filling main course - IF they eat dairy products... ditto with eggplant parmesan, veggie lasagna (you can even thinly slice eggplant or zucchini longways and use those instead of noodles)... all of which work great for a party, can be made ahead & baked just before serving. Falafel with pitas, tomatoes and cucumbers would be a nice offering if the guests don't eat dairy.

appetizers: fried mushrooms, zucchini, any veggie for that matter. serve with a ranch or blue cheese dip (again, IF the guests will eat dairy, if not, perhaps balsamic vinegrette emulsifed with mustard). these can be purchased in the frozen food section of most grocers, and only need to be popped into the oven prior to serving. fresh cut veggie platter with or without dip is usually a hit at any party, ditto fresh fruit trays. either can be purchased from you grocer's produce or deli area already cut.

also, contact local vegetarian restaurants, and see if you can order party platters from them or if they cater - it may save you a lot of worry & work, and you can arrange to pick it up just before the party.
