Since pancakes are actually "crepes" made fluffier, think about what you'd like to put in a crepe. Try putting cooked bacon into your batter before you cook them. Top with maple syrup. Stuff your pancakes with cream cheese and strawberries, top with blueberry syrup or whipped cream. Make savory pancakes by adding chopped green onion and shredded asiago cheese, top with your favorite white sauce. Thin your batter and make them into crepes. Stuff with cooked chicken, steamed asparagas, and top with a bechemel cheese sauce. The list is endless!

Pre-make your pancakes and freeze.. Pull them out whenever desired.

INGREDIENTS
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted
DIRECTIONS
In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

1 1/2 cups old-fashioned oatmeal
1 1/2 cups whole wheat flour
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups buttermilk
1 cup milk
1/4 cup vegetable oil

3 tablespoons chopped walnuts (optional)
DIRECTIONS
Grind the oats in a blender or food processor until fine. In a large bowl, combine ground oats, whole wheat flour, baking soda, baking powder, and salt.
In another bowl, combine buttermilk, milk, oil, egg, and sugar with an electric mixer until smooth. Mix wet ingredients into dry with a few swift strokes. Stir in nuts, if desired.
Lightly oil a skillet or griddle, and preheat it to medium heat. Ladle 1/3 cup of the batter onto the hot skillet; cook the pancakes for 2 to 4 minutes per side, or until brown.

You can serve pancakes with maple syrup and vanilla ice cream, even honey if that's what you like.

Chicken Divan Crepes

Using your fave pancake recipe, water down the recipe a bit and make the pancakes very thin. Cook as many as the recipe allows, then set aside.
Mix together
a can of cream of mushroom soup
1/2 finely diced onion
1 celery stalk, diced thinly
1 cup cooked, diced chicken breast
Mix together, heat up, and fill each pancake w/ 1/4 c. of the chicken mixture.
Serve w/ a nice green salad.
