Make a pudding using rice-flour (like rice-pudding) but use vanilla extract to flavour it.

The instant mixes will contain dried egg powder, so check the ingredients label before you use one - you never know, you may be lucky and find one without egg!

RASPBERRY TAPIOCA PUDDING WITH CHOCOLATE HEARTS


2 cups (480 ml) frozen raspberries
1/2 cup (120 ml) evaporated cane juice
3 tablespoons quick-cooking tapioca
1/8 teaspoon salt
2 3/4 cups (660 ml) soymilk
1 tablespoon lemon juice

1/2 to 1 teaspoon almond extract


Combine the raspberries, evaporated cane juice, tapioca, and salt in a 2-quart (2 liter) saucepan and mix together. Gradually stir in the soymilk and lemon juice until the mixture is well blended.
Bring to a boil, uncovered, over medium-high heat, stirring constantly, and boil for 1 minute. Remove from the heat and stir in the almond extract.
Cool 5 minutes, then spoon into serving bowls and chill 2 to 4 hours or until firm. Serve with Chocolate Hearts. Makes 6 servings.

My husband makes rice pudding without eggs...the rice, plus the added rice flour, thickens the consistency. You could try using something like that as the thickening agent. Google vanilla pudding recipe "no eggs" as well...(make sure to put the no eggs in quotes). I found a site the other day that had all recipes without eggs.

I cut the suger a little when I make this

INGREDIENTS
2 cups milk
1/2 cup white sugar
3 tablespoons cornstarch
1/4 teaspoon salt
1 teaspoon vanilla extract
1 tablespoon butter
DIRECTIONS
In medium saucepan over medium heat, heat milk until bubbles form at edges. In a bowl, combine sugar, cornstarch and salt. Pour into hot milk, a little at a time, stirring to dissolve. Continue to cook and stir until mixture thickens enough to coat the back of a metal spoon. Do not boil. Remove from heat, stir in vanilla and butter. Pour into serving dishes. Chill before serving.
