What is the guideline when making party platters?e.g. sandwiches and wraps.?

About 6 inches of sandwich per person, with different kinds of pickles and olives and peppers mounded here and there.

When I say 6 inches of sandwich I mean in total, the wraps (they are also called lavages) or sandwiches themselves should be two bite sized at the largest.

I don't think there are really any guidelines, but I have a couple of suggestions. Stick with simple wraps, maybe one type with veggies and one type with turkey, and use more common cheeses (jack or cheddar). This should satisfy most of your guests. Unfortunately, if they are too fancy some people my not like them. Maybe add some lettuce and tomato with the turkey, sprouts with veggie, keep it simple. As far as condiments, either have them available on the side or apply sparingly as some people are picky eaters, or are watching their diets. Good luck!

Everything should be miniature- 2 to 3 bites per piece. Such as cutting a sandwich in quarters or using mini rolls. All food should be arranged in a neat manner from bottom to top so as food is taken of the top it still looks good. Usually decorated with ingredients such as lettuce, mini tomatoes and radishes etc

I think it's easier to get them store bought.
Wal-Mart does these Lavish Wraps---very pretty, your choice of meats and cheese, with lettuce, wrapped in a soft tortilla.
They are cut the same way sushi rolls are cut but a little bigger.
And of course they do traditional finger sandwiches.

well only guidelines fo making sandwiches and wrap is neva use mayo bcuz fo 1 everbody dont like mayo and fo 2 mayo cant stay out too long b4 it starts 2 go bad so wat u will need 2 do is get u some mayo packages so those who crave mayo can have it and dat way everone is happy.

If your just serving appetizers, you should have at least 4 different types and you should allow 12-15 pieces per person.
