I want more of a lunch brunch then breakfast brunch, but not too much like lunch.

Bruschetta is good as a starter. Get some good quality sourdough bread and make thick slices. Toast it and rub garlic on one side. Quarter some organic tomatoes and press them into th etoast, sprinkle with some fresh chopped basil and seaon with salt and cracked pepper. Maybe have some chicken salad with a honey, soy dressing with sesame seeds over a mixed leaf salad with roast chicken, bacon (whatever else you like) and some fried asian crispy noodles from the store. Yummy.

Savory or sweet stuffed french toast is nice, a fruit plate, a cheese plate, breads, both sweet and not, a meat or two (ham works well here), possibly something like a seafood newburg, a salad, waffles, which can be topped with the newburg or syrup; coffee, tea, milk, juices.

The trick is to offer a combination of breakfast and lunch items.

Like dim sum, I imagine the goal of brunch to be getting a taste of just about everything offered. I generally set up my brunch on a buffet with plenty of small plates, salad forks, teaspoons, and napkins. Pitchers of Orange juice and bottles of Champagne for Mimosas, all the fixing's for Bloody Mary's, hot coffee, and tea, and plenty of bottled water, all round out the buffet.

Pick up extra copies of the Sunday paper. Design the leisurely mood with Jazz or Classical music on the CD-player, and a fire in the fireplace. For extra leisure, and for your less-modest guests, have them arrive in pajamas and slippers.

Sausage Brunch Casserole

INGREDIENTS
1 pound ground pork sausage
1 (8 ounce) package refrigerated crescent roll dough
2 cups sharp cheddar cheese.
4 eggs, beaten
3/4 cup milk
salt and pepper to taste
DIRECTIONS
Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Preheat oven to 425 degrees F (220 degrees C).
Lightly grease a 9x13 inch baking pan. Lay crescent rolls flat in the bottom of the pan. Combine cooked sausage, cheese, eggs, milk, salt and pepper; pour over crescent rolls.
Bake in preheated oven for 15 minutes, until bubbly and rolls are baked.
