Double Dipped Fried Chicken

Vegetable oil, for frying
1 1/2 cups flour
1 teaspoon paprika, 1/3 palmful
1 teaspoon poultry seasoning
1/4 teaspoon allspice, eyeball the amount
1 cup buttermilk
1 pound boneless, skinless chicken thighs
1 pound chicken breast tenderloins
Salt and pepper

Heat 1 1/2 inches vegetable oil in a deep skillet over medium high heat!. A cube of bread should brown in a 40 count when oil is ready!.

Set out 3 disposable pie tins!. Mix flour with paprika, poultry seasoning, and allspice!. Divide seasoned flour between 2 tins!. Pour buttermilk into a tin!. Line up tins as such: flour, buttermilk, and then flour!.

Season chicken with salt and pepper!. Coat chicken pieces in flour, then buttermilk, then a second coating of flour!.

Cook chicken 6 minutes on each side, until deep golden brown and firm!. Drain chicken on paper bags and cool before packing up for picnic basket!.


Picnic Potato and Chicken Salad

4 Idaho potatoes, peeled and cubed
1 1/2 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper
1 (6-ounce) skinless chicken breast
3 slices cooked bacon, crumbled
1/4 cup diced celery
1/4 cup diced onion
1 garlic clove, minced
1/2 cup mayonnaise
2 teaspoons mustard
1 tablespoon paprika
2 tablespoons chopped parsley leaves
2 sage leaves, chopped

Preheat oven to 400 degrees F!.
Place potatoes on a sheet tray, toss with oil, season with salt and pepper, and roast until golden and tender, about 30 minutes!.

Meanwhile, in a saucepan cover chicken with water and bring to a simmer over medium heat!. Poach until cooked through, about 15 to 20 minutes!. Remove from poaching liquid, let cool for a bit, and cut chicken into cubes!.

In a large bowl, toss together potatoes, chicken and bacon with the celery, onions, and garlic!. Add the mayonnaise, mustard, paprika, herbs, salt and freshly ground black pepper, to taste!. Mix until well combined!.Www@FoodAQ@Com

Buy one of those massive subs at the grocery store and have it sliced into 10 sections, add chips, and some brownies, store bought of course, also add a cooler with sodas and water bottles, add some of those water bottle flavor tubes!. also add wet ones and napkins, a box of cupcakes are always good!. stay away from chocolate candy it will melt!. also bug spray, bug bite meds and sun block!. Bandaides and neosporin!. Some plastic silverware, paper plates and a plastic trashbag, tell them to tie it to a tree!. you could also pack pizza slices cold in zip lock bags and lay in a cooler where the ice is also in ziplock bags to prevent the water from getting all over the place!. store drinks in there too!.Www@FoodAQ@Com

Sausage rolls or pain sausages; chicken pieces, either southern fried or oven baked; 2 Quiches sliced in 6s; large pork pie sliced in 12's; variety of sandwiches - egg, cheese, ham; plain bread rolls; Snacky things like crisps; individual yoghurt pots and spoons; selection of fruit; large flasks of juice or other beverages and paper cups; paper plates, napkins, and a bag for rubbish!. A good idea is to check for food allergies or preferences eg vegetarian and adjust for those exceptions!. Just change ingredients to suit what's available in shops, or on offer at the time!. you can chop up some watermelon and chuck in some grapes and strawberries
ham and cheese sandwiches (or some pre buttered bread and some ham and cheese and then they have the option of using the following ingreidents)
cold chicken
home made potato salad
boiled eggs
potato chips
you could make a nice pie or something for dessert
