Looking for summer fun menu idea's, see details?

We're planning a remote Island vacation for 10 people. Since it's on an island, food sources are limited. Also, we don't want to spend the entire vacation cooking, but when we do, we want it to feel like vacation food, not just the Wednesday night spaghetti and meatballs fare. We will bring most of our food supplies with us. Any quick, easy and fun idea's?

How about a tropical fruit salad? pineapples, oranges, cherries, bananas, apples, and a coconut milk dressing. It can be an appetizer or a desert!

Plenty of Greek islands with very little population do you eat sheep or goat besides seafood??

Vegetable kabobs area always a great idea. Baked potatoes are easy, too. Try looking up recipes on google on how Native Americans made bread (Biki is really good) or people from India and other southeast Asian communities make their food. A lot of India food is easy to make over an open fire like Dahl and Naan.
