1st decide what veggies you'll be serving, then figure on about 1 1/2 c. salad per person.
In the case of 200 people, then, you will need 300 cups of loosely packed vegetables.

i guess u need about 150 baby carrots 100 carrots 1000 corn and 500 of everything else

Plan on 11/2 cups of greens per person per salad, 1 cup assorted raw veges per person, 1/2 cup dip per person. You might want to limit your open salad bar to only a few items such as:

1. Baby spinach
2. Mixed field Greens
3. Baby carrots
4. Chopped green celery
5. Baby tomatoes
6. Cauliflower and/or brocoli florets
7. Green onions

Have two dressings. One should be a ranch style dressing and one should basically be a vinegrette.

Include toppings such as croutons, bacon bits, sunflower seeds.

Umm.. well if i were you i wouldnt have a single open salad.

** You do mean tray with finger food on it, in this case veggies**

anyway, going on that gut feeling.. you should have multiple trays.. Don't worry about numbers really. Just get what you think would be enough, because if this is your social hour of the party/ even, then i wouldn't be that worried about it. There will be a main course later and most people don't bother with the finger foods that much. The only ones i notice pecking at them are kids that haven't eaten b/c their parent sdidnt want them to ruin their meal, or the food pigs.. lol the list goes on..

SO my answer is get multiple trays with a decent number of veggies on each.. this way you create little 'stations' as opposed to one large cluttered area..

good lord, man- keep it simple for that many people- lettuce, tomatoes, onions, beans,cucumber, bacon bits, those little corns, etc.
