You could make bikes to eat! Use small cake donuts (donettes) or peanut butter cups for the wheels. Draw the rest of the bike on with icing out of a pastry bag or if you are a good artist, use licorice whips (or something similar) to sculp your own.
I like the oreo cheesecake idea, but I got the impression you were looking for individual dessert ideas? What about:
Rootbeer floats served out of beer steins (depending on age)
Slices of oreo cheesecake with oreo cookies on the sides as wheels....? I don't know, might a little cheesy but thats all I got off the top of my head.
