Dessert for fundraiser dinner?

Any ideas for a dessert we can serve with steak and shrimp? Looking for something that will impress without being too difficult to prepare.

Well, depends on the time of year.

Strawberry shortcakes can be a really nice choice if they're in season. (Make the shortcakes with bisquick and buttermilk and, after they're baked, slice them in half, butter them and sprinkle with sugar and put briefly under the broiler just before putting the strawberries on them. Top with either whipped cream OR a mixture of sour cream and brown sugar -YUMM!)

Also, you might consider setting up a 'Sundae Bar' and letting people make their own sundaes! It's a lot of fun and there's not much waste, since they made them the way they wanted them.

Creampuffs. You can fill them with ice cream or whipped cream or pudding. Drizzle a little chocolate sauce on top and you are done.

Cheesecakes always impress and are only difficult if you think they are.
Toppings can be cherry pie filling, strawberry, raspberries, blueberries or carmelized apples.

Basic Cheesecake
3 tablespoons butter, divided
1/2 teaspoon cinnamon
2 tablespoons brown sugar
1 cup graham cracker crumbs
1 cup sugar
2 1/2 teaspoons cornstarch
1 1/2 lbs cream cheese
2 eggs
1/2 cup cream or half-and-half
1 teaspoon vanilla

Pre-heat the oven to 350 degrees.
Butter a medium sized spring form pan with 1 tablespoon butter.
Melt remaining 2 tablespoons butter.
Mix the cinnamon, brown sugar, and graham cracker crumbs together, then stir in the melted butter.
Coat the crumbs well with the butter, then press them into the bottom of the spring form pan.
Place pan in the refrigerator for 30 minutes.
Whip the cream cheese in a mixer.
With the mixture running slowly, sprinkle in the sugar and cornstarch, then add in the eggs and vanilla.
Slowly add the cream or half and half until all ingredients are well mixed.
Pour into the spring-form pan.
Place the pan on a cookie sheet and bake for 40-45 minutes or until the top begins to brown and the cake is firm.
Cool at room temperature and refrigerate.
Serve well chilled.

A fruit sorbet. You can make it in advance really easily. Recipes can be found on the net. You can make several different flavours if you wish and it's a great dessert to cleanse the pallette after a tasty meal. Hope it goes well!

Ice cream with fruit salad. Buy Ice cream in bulk depending on guests you have invited. Buy seasonal fruits available. cut fruit in to desired size and mix. Before serving put ice cream in a bowl and put some quantity of mixed fruits on top of it. You can prepare 100 cups of deserts within 10 minutes.

What about going with lemon bars. These are very good because they aren't too rich for people that don't like very sweet things, like chocolate. A lemon bar is made up of usually a granola or gramcracker like substance on the bottom with the lemon part on top. Then they are usually topped with powder sugar. these are very easy because you can make a lot in just one batch, similar to brownies, you can cut them up, to serve a lot. Key Lime pie sqaures you can make a big pan of them just triple or double a graham cracker crust recipe.

No Cook Key Lime filling For filling
1 pound cream cheese, softened
3/4 cup fresh lime juice
a 14-ounce can sweetened condensed milk
1 teaspoon finely grated fresh lime zest

1 cup crème fra?che (3/4 cup sour cream, 1/4 cup heavy cream leave on the counter covered for several hours or overnight
1/2 teaspoon good vanilla extract (I use Mexican)
1/3 cup confectioners' sugar

Garnish: 8 lime slices

Make filling
In a food processor blend cream cheese, lime juice, and condensed milk until smooth. Add zest and pulse just until combined. Pour filling into shell. In a bowl with an electric mixer beat crème fra?che with confectioners' sugar until it forms soft peaks and spread evenly over filling. Arrange lime slices on top of pie. Chill pie, loosely covered, at least 6 hours and up to 1 day.

Cheese Cakes are always a hit.. There is several no-bake recipes that are very easy to prepare. Go to the website allrecipes.com...My favourite is the Pina Colada Cheese Cake...Yummy and very impressive...Sherry N.

How about Lemon Scones? there are many good recipes online for them, easy to prepare yet elegant. There are also other flavors you can make.

Individual flourless chocolate cakes. The recipe is in Joy of Cooking and is easy to follow (let me know if I need to post it for you). Spoon the batter into a the cups of a 12 cup cupcake pan. Bake til ALMOST done (so that it is gooey in themiddle-Molten). Serve each cake on it's own saucer and dusted with powdered sugar. Put about 5 raspberries on the saucer and top with HOMEADE whipped cream. Add 2 tablespoons of Ameretto(sp?) or your favorite liqouer (sp?-can't spell today for some reason) to the whipped cream after it's stiff peaks. Put a dollop beside each cake and serve.

The batter can be made well in advance and kept in the fridge. When dinner is over, just pop the batter-already-added cupcake pan in the oven for 7 minutes. Whip up the cream while it cooks. Piece of cake!

Get a coffee cake and some apple pie.

I have yet to meet anyone who doesn't go nuts over this easy recipe. It looks very fancy and difficult, but it's NOT:

Black Forest Pie

Prep Time: 40 min
Total Time: 2 hr 55 min
Makes: 10 servings

3/4 cup sugar

1/3 cup cocoa powder

2 Tbsp. flour

1/4 cup (1/2 stick) butter or margarine

1/3 cup milk

2 eggs, lightly beaten

1 can (21 oz.) cherry pie filling, divided

1 unbaked 9-inch pastry shell

1 square BAKER'S Semi-Sweet Baking Chocolate, coarsely grated

1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided


PREHEAT oven to 350°F. Combine sugar, cocoa and flour in medium saucepan. Add butter and milk. Bring to boil on medium heat, stirring constantly. Remove from heat. Stir small amount of hot mixture into eggs; return to hot mixture. Add half of the cherry pie filling; stir until well blended. Pour into crust.

BAKE 35 to 45 min. or until center is almost set. Cool. Refrigerate 1 hour.

ADD grated chocolate to 2 cups of the whipped topping; stir gently until well blended. Spread over pie; top with remaining cherry pie filling and the remaining whipped topping. Refrigerate at least 30 min. before serving. Store leftover pie in refrigerator.
