How to make tea sandwiches?
Helping to host art show for sister. she wants to serve refreshments on premiere night. it was suggested we make and serve tea sandwiches. How exactly do you prepare them?
Answers:
Make your favorite sandwich, cut off the crusts and cut into three one inch by three inch sandwiches, tea sandwiches are the same thing as fingeer sandwiches. If you would like some suggestions; try cream cheese and cucumber, ham and swiss cheese, smoked salmon and lemon butter, and you will get a great laugh if you make peanut butter and jelly(however people will go for them no matter their age or measure of wealth: )
Just make a regular tuna or egg salad sandwich or any other kind, and cut the crusts off and quarter the sandwich diagonally (in triangles).
CREAM CHEESE CUCUMBER TEA SANDWICHES
12 oz. cream cheese
1 med. cucumber, grated and well drained
1 grated onion, small
1/8 tsp. salt
Mayonnaise to spread
Dash of Tabasco
2 drops of green coloring
Mix all together. Let sit overnight. Spread on whole wheat bread, cut forming triangles or squares.
The main key is to be sure there are no crusts on the sandwiches! That makes them fancy!
Use a square loaf of bread, one where the slices are square, not a rounded, "butter-top" or "split-top" bread. Use a combo of white and wheat. Square bread allows you to cut sandwiches into either 3 "finger" long thin sandwiches, or 4 triangles (cut into an X). An electric knife will work best here, but a good serrated knife is also ok.
Always put butter on the bread, before mayo or other filings. The butter acts as a barrier and keeps the bread from getting soggy from the mayo or tomato or what have you.

Carrot Cake Tea Sandwiches
Makes 18 sandwiches
1 (8 oz) pkg. cream cheese, softened
? cup grated carrots
? cup powdered sugar
? cup chopped pecans
12 slices Raisin Bread, crusts removed
Combine first 4 ingredients until well mixed. Spread cream cheese mixture on half of the bread slices, topping with another slice of bread, and cut into 3 fingers.

Herbed Vidalia Onion Tea Sandwich
1/2 cup mayonnaise
2 tablespoons minced fresh flat-leaf parsley, plus 1/2 cup or more, as needed
2 tablespoons minced fresh tarragon leaves
Fresh lemon juice, optional
Hot pepper sauce
Salt and freshly ground black pepper
8 very thin slices white bread
1 to 2 Vidalia onions (available seasonally at specialty produce markets and some supermarkets), sliced very thinly
In a small bowl, stir together the mayonnaise, 2 tablespoons of the parsley, and tarragon. Stir in lemon juice, hot sauce, salt, and pepper, to taste.
Spread 1 side of the bread slices with the mayonnaise mixture, arrange the onion slices evenly on half the bread slices, and top them with the remaining bread slices. Press the sandwiches together gently, trim the crusts, and cut the sandwiches into quarters.
Put the remaining 1/2 cup parsley in a shallow bowl and dip the edges of the sandwich quarters in the parsley.

Shrimp Butter Tea Sandwiches
1 cup butter
1 cup minced cooked shrimp
1/4 tsp. salt
dash paprika
3 tablespoons lemon juice
leaf lettuce
thinly sliced country style white bread, crusts removed
Cream butter shrimp, salt, lemon and paprika to a paste or leave a little more texture if you wish. Spread a small slice bread with the shrimp butter, add a piece of lettuce and top it with another slice of bread. This is also good on a cracker with a tiny sprig of fresh dill topping it off.

Depending on where you live, you can buy loaves of bread that have slices that are about 2 inches square. Here they are called sociables. Try your deli section or specialty store. Usually they come in rye or some other denser variety. If you use a basic chicken salad, it looks really neat if you hold the sandwich together with a toothpick skewered with an olive or garnish. Remember simple is often the best way to go. Stay away from anything that will make the bread soggy like jams & certain fruits. Good Luck
