1-1/2 cups Cottage Cheese
1 pkg. (10 oz.) frozen chopped spinach, thawed, drained
1/3 cup Italian Dressing

Mix all ingredients until well blended.
Serve with your favorite fresh vegetable dippers

Sun-Dried Tomato & Garlic Dip
1 tub (8 oz.) Cream Cheese Spread
1/2 cup Miracle Whip
1/2 cup sun-dried tomatoes packed in oil, drained, chopped
2 Tbsp. finely chopped fresh chives
1 clove garlic, minced
1 tsp. freshly ground black pepper

Mix all ingredients until well blended.
Serve with crackers and cut-up fresh vegetables, if desired.


Pasta Florentine
1 pkg. (14.5 oz.) Macaroni & Cheese Family Size Dinner
1 cup sliced fresh mushrooms
1/2 cup chopped onion
1 Tbsp. butter or margarine
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1/3 cup milk

Prepare Dinner as directed on package.
Cook and stir mushrooms and onions in butter in large skillet on medium-high heat until tender.
Add to Dinner with the spinach and milk; mix lightly. Cook on medium heat until heated through, stirring occasionally.

These cheese twists make an elegant, easy appetizer. Enjoy!

6 tablespoons butter or margarine, softened
1 garlic clove, minced

1 cup shredded Cheddar cheese

DIRECTIONS

Divide dough into 20 pieces. Roll each piece into a 10-in. log; cut each in half and twist together. Place 1 in. apart on an ungreased baking sheet. Bake at 375 degrees F for 10-12 minutes or until golden brown. Remove to wire racks.

Green bean casserole is always a quick winner. I like to use the cheddar onions and frozen french style green beans (thawed ofcourse). I happen to like the fat free mushroom soup, but hey, its a party, go for the full fat! :-)

The sure fire dish I always bring is green beans with cream of mushroom soup but I make sure to bring a can of fried onion rings. Mmmmmmmm, I've never taken any home!

Fry up some pancetta or chorizo with some green garlic stems (like scallions, except garlic i/o onions) and sprinkle on some fresh parsley or cilantro.

You did'nt say what kind of dinner party, a veggie tray with dip, cheese & bread, a dessert, chili, cheese & crackers, chips & dips, fruit tray, homemade ice cream,casseroles.

get a couple of cans, add some mustard and kethcup, powdered cloves, brown sugar and bake for an hour or 2. This will blow peoples minds.

I like to roast a mess of different colored veggies till just fork tender (carrots, zucchini, eggplant, red peppers, red onions, yellow squash, cherry tomatoes, and heads of garlic)

Then arrange on a platter in colorful rows and drizzle with good olive oil, lots of lemon zest and flat leaf parsley (if I know the people I am cooking for I may dress with anchovies as well) a sprinkle of good Parmesan and serve with bread to spread the garlic on

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled

Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

Finger foods are good. Thinks that require a knife and fork are not.

Spring rolls or summer rolls are good. Chicken wings (either buffalo style, bbq, or crispy and seasoned), dates stuffed with feta cheese and almonds or walnuts, cookies, little mini desserts, hummus and pita chips, baklava.... you get the idea.

Hot Artichoke Dip

2 cans artichoke hearts, drained and coarsely chopped
1 can diced green chilis
1 tsp lemon juice
1 tsp hot sauce
1/2 -3/4 cup good whole egg mayonaise
2 cups shredded parmesan or Italian blend cheese
1/2 cup shredde parmesan

Blend the above ingrediants and bake in a 375 degree oven until bubbling and golden brown on top. Remove from oven and sprinkle with cheese. Cover until cheese melts. Serve with tortilla chips or your favorite crackers.

It depends on the type of dinner party. If it's more upscale bring a cheese tray with a good bottle of versatile red and white and tell people how to pair them.

If it more casual bring a nice, light, portable dessert. Grilled fruit with yogurt dip!

1 14 ounce can artichokes, rough copped
1 cup parmesan cheese
1 cup mayonnaise

Mix everything in a pie plate. Bake at 350 for 35 minutes. Serve with Triscuits.
