Here are some ideas:

1. Anaheim Chili's with Cheese: Put chili's over flame to blister and remove skin. Seed the chilis and cut into large pieces. Brush with olive oil and sprinkle with salt and garlic powder. Top with slices of jack cheese and bake until melted. These are wonderful! Serve with dollaps of salsa if desired.
2. Beefsteak tomatoes with mozarella cheese slices, fresh basil and a redwine vineagrette. Serve with baguette slices.
3. Chips and salsa
4. Chili Cheese Dip: take 1 pkg. cream cheese, softened, and put in pie pan. Top with a can of your favorite chili, 1 cup cheddar cheese, and nuke for 2 minutes. Top with chopped cilantro and serve with corn chips.
5. Baguettes with Artichoke Tapenade: Hollow out baguettes and brush with olive oil. Take 1 can of marinated artichoke hearts and roughly chop. Take 1 can of artichoke hearts, drain, and roughly chop. Mix together with 1 cup shredded parmesan cheese. Place in baguettes and bake briefly until cheese melts.
6. Fruit kabobs: strawberries, pineapple cubes, bananas dipped in lemon or pineapple juice.
