Question: Parents Anniversary Tomorrow!.any ideas for dinner!?
me and my sis!. wanna make them something special but don't know what!.
They like all kinds of food but my moms a Vegitarian so no meat!.
We decided not to make anything pasta related :D!.

This recipe calls for white wine and I am not sure if you are old enough to purchase this but just in case I have included the recipe!. I am also including some substitutes for white wine in a recipe!. For dessert make Warm Dark Chocolate Cakes!. Yummy!!! Your parents must be very proud of their daughters! What a wonderful thing you are doing for them! They will love it!

Cook Time: 30 minutes

Stuffed Peppers with White Wine Risotto

Ingredients:
4-6 red bell peppers
2 tbsp olive oil + 1/4 cup
1/2 tsp salt
1/2 tsp garlic powder
3 scallions
4 cloves garlic
3 cups vegetable broth
1 cup white wine, separated + 1 tbsp
1 cup Aborio rice
1/2 cup sun-dried tomatoes (re-hydrate if necessary)
1 portobello mushroom, halved and sliced
1 tbsp margarine
parmesan cheese (vegan or dairy, optional)

Preparation:
Slice tops off of peppers and scoop out seeds!. Place in baking tray!. Drizzle with 2 tbsp olive oil, garlic and salt and bake at 350 degrees for 15-20 minutes, or until just barely tender!.
Meanwhile, heat vegetable broth and 1/2 cup wine over low heat til hot, just before simmering!. In a separate large skillet, sautee scallions, garlic cloves in 1/4 cup olive oil!. Add rice and mushrooms until rice is toasted, but not burnt, stirring frequently!. Add 1/2 cup white wine and simmer one more minute!. Add 1/2 cup of the broth and wine mixture to rice!. Allow to cook until the liquid is almost absorbed!. Continue adding broth mixture 1/2 cup at a time until rice is cooked, about 30 minutes!.

Add 1 tbsp margarine and 1 tbsp wine just before done cooking!.

Stuff into peppers!. Sprinkle the stuffed peppers with parmesan, if desired, and bake 10 more minutes!.

Noted substitutes for white wine in a recipe: Non-alcoholic wine, chicken broth or stock, diluted white wine vinegar or cider vinegar, white grape juice diluted with white wine vinegar, ginger ale, canned mushroom liquid, water!.

Warm Dark Chocolate Cakes

6 oz!. dark chocolate, chopped
1 oz!. unsweetened baking chocolate
1/2 cup butter
2 eggs
2 egg yolks
1/3 cup sugar
1/2 cup plus 3 T flour
whipped cream for garnish

Makes 6 1/2 cup cakes
Pre-heat oven to 350°F!.Butter 6 1/2 cup souffle or custard cups!.

Melt butter and chocolate in a heavy saucepan over medium heat, stirring constantly!. Cool to lukewarm!.

Whisk eggs, yolks and sugar in top of a double boiler set over simmering water (do not allow bottom pot to touch water)!. Whisk for 2-3 minutes or just until warm to the touch!. Remove top of double boiler!. Using an electric mixer, beat egg mixture until very thick and pale yellow (about five minutes) Fold chocolate mixture into egg mixture!. Sift flour over batter and fold flour into batter until well mixed!. Divide batter between the prepared dishes!. Bake for about fifteen minutes!. Edges of cake should be set, but a cake tester should come out with wet batter attached to it!. Serve immediately with whipped cream!.
