It depends on your budget and how much of it you plan to cook. For me, I prefer to have fewer great dishes than a lot of mediocre. There are a few key things that will make it excellent. Make sure you go to the best bakery around to get the rolls. Serve them with herb butter or olive oil and balsamic. Make a really great salad that keeps with your food "theme". For example if most of your food is going to be italian have dishes of italian olives, fresh parm., papperoncini, etc. to top it with.

You should keep appetizers simple. In my experience people tend to fill up on appetizers and don't eat the food you are spending the most money on. Fruit and cheese trays are light and tend to go over well. Stear clear of the carbs, they fill people up!

For the main dishes keep in consideration everyone's dietary restrictions. Considering that it is a 60th birthday everything should probably be low cholesterol. I would suggest two baked, grilled or roasted meats/fish. For the sides rice, roasted potatoes and pasta with seafood. Get a birthday cake, but also get some pastries for those who don't like sugary cakes.
