Food for birthday/Easter party.?

We are having my daughter's 4th birthday party on the Saturday before Easter. We are having a Easter egg hunt, pinata, moonwalk and lots of games. I need to feed about 50 people and everyone will be eating in the backyard. My husband wants to BBQ but I'd rather do something a little more interesting. Any ideas? Please try to keep it simple, as I work full time and have limited time to prepare the food. Note: Obviously, we will be having birthday cake and punch for dessert.

If he wants to BBQ, that's one less thing you have to prepare - let him do it. You can make it interesting by making some fun sides to go along. Or, if you don't have time, you can have a favorite restaurant make the sides for you.

Finger foods are great because then people can stand and talk and don't have to sit to eat.

I know you want to impress your guests, but even the most simple meal can be impressive when presented right. Let your husband do some of the work and outsource the other stuff. You concentrate on being the coordinator and making sure everything looks great.

Tamales are my favorite! You can buy homemade ones all over SoCal... Just serve them with red and green salsa.

If you don't want a bbq then make a big tray of bakes ziti you can make it ahead and then just cook when ready. You can also buy in the grocery store frozen meatballs and make either swedish meatballs or meatballs with your favorite jar sauce and just put it in the crock pot. You can also make a big tray of sausage peppers and onions and then just serve a salad and some rolls with butter and appetizers. Just snack food

Let your husband BBQ, that will take care of the meat and breads, american cheese, pickles, ketchup, mustard, relish.
Make a big green salad with italian dressing
Classic potato salad.
Put out fresh peaches, oranges, sliced watermelon
Put out your birthday cake and punch.
Maybe make some brownies, buy some ice cream.
Coffee? Thats up to you. Everything disposable. 50 people is alot of work.

Mac and Cheese for a bunch:
prep time 20 min bake 15 min.

3 packages (two 16 ounces, one 7 ounce) elbow macaroni
1 1/4 cups butter divided
3/4 cup all-purpose flour
2 teaspoon salt
3 quart milk
3 pounds sharp cheddar cheese, shredded
1 1/2 cups dry bread crumbs

Cook Macaroni according to package directions until almost tender. Meanwhile, in a large soup kettle, melt 1 cup butter. Stir in flour and salt until smooth. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Add cheese, stirring until melted. Drain macaroni; stir into sauce.

Transfer to 3 greased 13in. x 9 in. x 2in baking dish's. Melt remaining butter; toss with bread crumbs. Sprinkle over casseroles, Bake uncovered, at 350 for 35 to 40 min. or until golden brown. Yield 36 servings.

A fruit salad would be simple and colorful.
make 3 doz eggs worth deviled eggs (decorate for Easter)
Pasta salads are easy to prepare the day before (just don't put the dressing on until the day of.
